Beef pot roast with chanterelles
(Germany)
Ingredients (for 6 persons)
2,5 kg beef
30 g cooking fat
100 g fatty bacon
1 onion
1 tomato
1/2 apple
1 gherkin
400 g fresh chanterelles
Pepper, paprika
3/4 l water/liquid
1/2 l white wine
1/4 l cream
Flour
Plug in the roaster's heating element. Insert the
roaster in the first level from below. Set the oven to
the "Roaster" function and preheat to 200 °C.
Preparation
Rinse and dry the meat. Cut the bacon into cubes.
Peel the onions and skin the tomato and then cut
both of them into quarters. Clean the chanterelles.
Peel and core the apple and cut the apple and
gherkin into cubes.
Place the cooking fat in the preheated roaster and
brown the first side of the meat for about 5 minutes.
After turning the meat, add and brown the bacon
cubes, the vegetables and half of the chanterelles.
Add 1/2 l water/liquid and put the lid on. Switch
back to 120 °C. Stew the roast for 1 1/2 hours and,
if necessary, add liquid or wine. Switch to 180 °C.
Stew the roast for 1 further hour.
Take out the roast when the cooking time has
ended. Add wine to the meat juice sauce and boil at
200 °C, thickening it with stirred-in flour. Add the
rest of the chanterelles. Add cream and season.

Veal rolls in tomato sauce
(Italy)
Ingredients (for 5 persons)
10 thin veal escalopes (100 g each)
10 thin slices of raw ham
10 slices of cheese
Fresh Italian herbs (oregano, sage, thyme, basil,
rosemary)
Cooking fat
Sauce
750 g strained tomatoes
200 ml wine
150 ml cream
Fresh Italian herbs (oregano, sage, thyme, basil,
rosemary)
Salt
Plug in the roaster's heating element. Insert the
roaster in the first level from below. Set the oven to
the "Roaster" function and preheat to 220 °C.
Preparation
Place one slice each of ham and cheese on the veal
escalopes. Chop the herbs and spread them evenly
over the roulades. Roll up the meat and secure the
rolls with small wooden sticks.
Mix all ingredients for the sauce.
Place cooking fat in the pre-heated roaster and
brown the meat rolls in it. After turning the meat,
pour the sauce over it. Fit the lid and switch back to
160 °C. Cook for another 30 minutes.
