Braising in the roasting dish

Braising is the combination of searing meat in a little
fat followed by slow stewing. The cast iron design of
the roasting dish ensures excellent even heat
distribution. The non-stick coating enables you to use
very little fat and, therefore, cook healthy, low-calorie
dishes.
Insert the heating element for roasting. Insert the
roasting dish into the pull-out system in the lowest
shelf position in the oven. Close the oven door. Select
the "roaster function" and the desired temperature.
The temperature can be set to a maximum of 220 °C in
the roaster function.
Wait until the heating-up indicator switches off before
putting food in the roasting dish. Sear the food
without the lid for a short time. Deglaze with sufficient
cooking liquid. Place the lid on the roasting dish and
leave the food to stew at the desired temperature.

Roasting in the roasting dish

Insert the heating element for roasting. Insert the
roasting dish into the pull-out system in the lowest
shelf position in the oven. Close the oven door. Select
the "roaster function" and the desired temperature.
The temperature can be set to a maximum of 220 °C in
the roaster function.
Wait until the heating-up indicator switches off before
putting food in the roasting dish. We recommend
using the core temperature probe, which automatically
turns off the oven once the food reaches the desired
level of cooking.
Caution! Only use the core temperature probe when
cooking without the lid.

Searing function

Only for oven models with roaster function:
In the searing function, the oven heats up at full
capacity for approx. 3 minutes. You can use this
function to sear steaks, for example.
Opening the door turns off the searing function. Do
not use the lid when cooking in the searing function.

function in the instruction manual for your oven.

Use as an ovenproof dish

The roasting dish can also be used as an ovenproof
dish. To do this, place the roasting dish on the second
shelf from the bottom of the pull-out system. Select
the "top + bottom heating" function. Select the
desired temperature up to a maximum of 220 °C.

Tips and tricks

The non-stick coating enables you to roast using very
little fat. If you are preheating the roasting dish in the
oven, only add the fat just before roasting.
Tip: Instead of adding the fat to the roasting dish, oil
the meat. This ensures a direct heat transfer.
Cooking liquids reduce down quickly. Make sure there
is always sufficient cooking liquid. For a cooking time
of approx. 30 minutes, add approx. ½ l liquid. When
roasting in a sauce, always ensure the sauce remains
runny and add cooking liquid.

Cleaning and maintenance

Caution! Remove the heating element, pull-out system
and roasting dish from the cooking compartment
during pyrolysis cleaning. The high temperatures
during pyrolysis cleaning damage the non-stick
coating.
The non-stick coating allows most dirt to be removed
with hot, soapy water and a soft brush. Soak stubborn
dirt deposits in soapy water.
Never use abrasive or aggressive cleaning agents,
grill or oven sprays, sponges with scratchy surfaces,
or sharp objects to clean the roasting dish. These can
damage the non-stick coating.
Do not clean the roasting dish in the dishwasher.
Store the roasting dish with the lid on correctly, not
upside down in the roasting dish. Otherwise, you will
scratch the non-stick coating.
