9.11 PROGRAMMING AND OPERATION: DEAERATION CyClES
Read Chapter § 6.5.3 carefully
WARNINg! As already illustrated in § 9.6, if the product to be dearated is liquid, air bubbles
may form. This considerably increase of the volume of the product by increasing the degree
of vacuum. The available programs aim at preventing – based on their consistency and flui-
dity – an excessive formation of bubbles, so as to prevent leakage of the product from the container.
The liquid must not leak in any way, so as to prevent it from being accidentally inhaled from the pump.
Stop the cycle immediately if you notice any leakage of the product form the container by using the
The deaeration programs available are:
1) Solid foods
2) Thick sauces
3) Tomato sauces
4) Marinates
5) Cream bases for pastry
In increasing order of the air captured inside the core of the product. They last between 3 and 8 minutes.
9.11.1 DEAERATION MADE By CONTAINERS
Proceed as follows:
1) Place the container with the product inside the vacuum chamber. Use a container
high sides.. Fill the container up to a maximum of 3/5 of its volume. If the product has been blended, it must rest in the
refrigerator for at least 2 hours.
2) Start-up.
Switch the machine on via the main switch.
3) Select the deaeration program and then the suitable pro-
gram for the product to be deaerated:

Select the "DEAERATION"
program.

Select the desired "DEAE-
RATION" program.
4) lower the lid to start the cycle.
5) End of cycle. The lid is opened automatically.
6) Interrupting a cycle. The machine immediately
stops the cycle and the chamber is decompres-
sed when the "STOP" button is pressed at any
time. The lid is opened automatically.
The machine returns to the previously set pro-
gram.
