which the temperature rises relatively quickly, in order to ensure
that the first batches are perfectly baked. If active, the oven will
automatically enter Eco Stand-by mode once the heating phase is
complete. You can disable Eco Stand-by:

manually, as described in 3.2.3

automatically, by activating the cooking timer
When the "Auto Eco Stand-by" setting is active in RECIPE mode,
in addition to the function described above, the oven will
automatically enter Eco Stand-by mode even after a period of
chamber inactivity.
3.6.2
"POWER CLEANING"
WARNING!
Before carrying out the "Cleaning"
program, carefully remove any cooking residue from the glass
surface.
The "Oven Cleaning" function allows you to eliminate any
cooking residue present in the baking chamber through pyrolysis
(carbonisation). When the function is activated, the pre-set high-
temperature program will start for a time interval set in the factory
by the Manufacturer, and the display will show specific icons and
warning messages. The program will end automatically. Once the
program is completed and the oven is at room temperature, you
can simply remove the charred residue using a special brush.
NOTE:
Daily use of the cleaning program significantly
affects electricity consumption; it is therefore recommended
that you only run it weekly or when strictly necessary.
3.6.3
"HOTKEY"
The Hotkey button on the Layout screen can be paired with a
function chosen by the operator. The following are the most
common:

3.6.4
"WI-FI" CONNECTION
The tablet includes a module to connect to the establishment's Wi-
Fi network. You can connect to Wi-Fi by going to Settings >
Support > Internet Connection > Enable and following the
instructions shown on the screen.
An Internet connection allows for access to software updates and
connectivity with the "SmartBaking App", a mobile application
available in the official stores.
3.6.5
RADIO CONNECTION BETWEEN THE TABLET
AND BAKING CHAMBERS
The tablet and baking chambers can also be connected via an
autonomous 2.4 GHz (wireless) radio connection, without the use
of routers or other interconnection tools (no Wi-Fi network
required). The tablet includes a battery that allows it to be used
wirelessly. When you opt to connect the tablet via radio, make
sure you have a 5V 2A power supply with a USB-C output
connector nearby.
If there are multiple tablets in use, make sure that they are set to
different radio channels in order to avoid interference between the
ovens during normal operation. You can go to Settings > Support
> Configure Oven > Radio channel to change the radio channel
and differentiate it from any others present in the establishment.
3.7
STOPPING
You can turn off the baking chamber heating elements

via the cooking screen, using the START/STOP button
-
via the layout screen, using the START/STOP button (if it is
set as a Hotkey function)
-
via the layout screen, with a double tap on the timer area
-
via the layout screen, with a long press to turn off all the
baking chambers that are not in use.
Turn off the tablet using the "power off" button (fig. 27, Detail E)
on the display, and wait for the display to go black.
Switch off the equipment switch located on the right rear pillar
(fig.2 part 3) of each cooking chamber.
Disconnect the power supply by turning off the external main
sitch of the appliance.
4
ORDINARY MAINTENANCE
4.1
PRELIMINARY SAFETY OPERATIONS
CAUTION!
operations, interrupt the power supply by turning off the
switches installed outside the appliance and wait for the
appliance to drop to room temperature. Always use suitable
protective devices (gloves, goggles, etc.
All the precautions are crucial for the good conservation of
the appliance and failure to observe them could cause serious
damage not covered by the warranty.
4.2
ROUTINE CLEANING
After carrying out the operations described in point 4.1 above, for
routine cleaning clean the appliance as follows:
Every day, at the end of operations and after leaving the appliance
to cool down, carefully remove from all parts of the appliance,
any residues that might have collected during cooking, by using a
damp sponge or cloth and a little soapy water, if necessary and
then rinse and dry the areas, making sure to wipe parts with satin
finish in the direction of the satin finish.
Carefully clean all accessible parts.
CAUTION!
Every day, carefully clean off any fat or
grease that may have dripped during cooking as this is a
potential fire hazard.
CAUTION!
Do not wash the appliance with water jets
or steam cleaners. Avoid that water or any products used may
come into contact with the electrical parts. It is forbidden to
use for cleaning detergents harmful to health.
NOTE:
Do not clean the tempered glass in doors when
still hot.
If alkaline solution is used, take care that it is completely
removed from the glass before it is subjected to heat.
Do not use solvents, detergents containing aggressive
substances (chlorides, acids, corrosives, abrasives, etc.) or
tools that could damage surfaces. Before starting up the
appliance again, make sure that none of the cleaning
equipment has been left out.
4.3
PERIODS OF INACTIVITY
If the appliance is not to be used for long periods:
- Disconnect it from the power supply.
- Cover it to protect it from dust.
- Ventilate the rooms periodically.
- Clean the appliance before using it again.
