from the Recipe screen in that the parameters are completely
independent. The parameters that can be set are as follows:

b. Top Power

Deck Power

In this mode, there is no option to set the recipe inputs such as
"Prebaking level" "Prebaking By", etc.
3.2.4
FIRST IGNITION
For the first time activating the appliance, and for subsequent
activations after a prolonged period of inactivity, it is essential that
you respect the following initial activation procedure using the
DUAL POWER mode (see section 3.2.3.2):
- Set the temperature to 90 °C and leave the appliance in operation
for about 2 hours. If there is a lot of steam inside the modules,
open the doors for a few minutes to let it out, then close them
again.
- Increase the temperature to 150 °C and leave the appliance in
operation for about 2 hours. If there is a lot of steam inside the
modules, open the doors for a few minutes to let it out, then close
them again.
- Increase the temperature to 200 °C and leave the appliance in
operation for about 2 hours. If there is a lot of steam inside the
modules, open the doors for a few minutes to let it out, then close
them again.
- Increase the temperature to 220 °C and leave the appliance in
operation for about 1 hour. If there is a lot of steam inside the
modules, open the doors for a few minutes to let it out, then close
them again.
- Increase the temperature to 260 °C and leave the appliance in
operation for about 1 hour. If there is a lot of steam inside the
modules, open the doors for a few minutes to let it out, then close
them again.
- Wait for the temperature to drop to room temperature values
before starting the next starts. If there is a lot of steam inside the
modules, open the doors for a few minutes to let it out, then close
them again.
This procedure allows to eliminate the dampness accumulated in
the appliance during the production, storage and shipping period.
NOTE:
It is possible for the appliance to give off
unpleasant odours during the operations mentioned above.
Ventilate the area.
CAUTION!
Avoid leaving open the appliance doors
for long periods, especially at high temperatures; this is to
prevent the hazards of burns and overheating of parts close
to the doors.
CAUTION!
The appliance can be used for the first use
only after carrying out the previous operations which are
absolutely essential for perfect operation.
CAUTION!
Never use the appliance to heat the first
time it is turned on and for subsequent turns on after a
prolonged period of inactivity.
NOTE:
In the following ignitions, in order to prolong the
life of the components (heating surfaces, etc.), excessive
heating must be avoided. Each time before reaching the
operating temperature, keep for at least 40 minutes a
temperature between 120 °C and 160 °C.
3.3
ACTIVATING THE BAKING CHAMBER:
You can activate the baking chamber elements
-
via the baking screen, using the START/STOP button
-
via the layout screen, using the START/STOP button (if it is
set as a Hotkey function)
-
via the layout screen, with a double tap on the timer area
- via the layout screen, with a long press to activate the heating
elements of all the baking chambers that are off.
The oven will enter the heating phase, i.e. raising the temperature,
and provide an estimate of the time required to reach the set
temperature. When the set temperature has been reached, the area
will turn red and you can proceed with baking. Tap the timer to
activate a countdown. At the end of the countdown, the area will
light up and an alarm will sound.
The baking timer also offer the following functions:

long tap to reset the timer before it expires
-
when the timer has been started or is expiring, double tap to
add 30 seconds to the displayed timer
3.3.1.1 RECIPE INFO
For each available recipe, based on the selected cycle, it is
possible to configure inputs relating to the product you intend to
cook. Based on these inputs, an algorithm will automatically
calculate the cooking parameters necessary to execute the selected
product cycle.
For example, the following inputs can be set for the "Refining®"
cycle in the "Pizza" category:

"Prebaking by": defines the origin of the pre-baked product
-
"Level": defines the prebaking percentage of the prebaked
product
-
"Topping": defines the quantity of toppings present
-
"Type": defines the type of the baked product
-
"Product status": defines the status of origin of the baked
product
-
"Support": defines the support used for baking
These settings can be stored using the "Save" button or stored as
a new recipe using the "Save as" or "Reset" button (Fig. 30,
Details a,b,c).
3.3.1.2 SELECT RECIPE (Fig. 31)
This screen lists all the recipes present in the tablet's memory,
divided by Category. Select the Category using the lower buttons
(Detail a) or Dual Power mode (Detail b), then scroll through the
list and select the desired recipe cycle (Detail c). The "Edit" button
(Detail d) opens the product input screen, and the "Star" button
(Detail e), if activated, makes the recipe appear at the beginning
of the list, to facilitate searching.
3.3.2
"DUAL POWER" MODE (Fig. 29)
For this mode, the cooking parameter settings are at the discretion
of the operator, who will have to set the working temperature and
the desired top and bottom power percentages, considering that
the 100% setting corresponds to the element always being on, and
the 0% setting corresponds to the element being off; intermediate
percentages correspond to partial values.
3.4
CONTEXTUAL MENU
1. SmartDeck: the switch activates/deactivates the adaptive
bottom element function; this function allows the bottom
element to automatically adapt the power percentage as the
temperature falls below the setpoint. By clicking on the
SmartDeck menu item, you can access the correction
parameters (refer to the Support Service for further
information);

Auto Eco Stand-by: the switch activates/deactivates the
automatic activation of the "Stand-by" function;

Hotkey: to select the special function to pair with the button
on the Layout screen;
4.
Reset slider position: resets the recipe settings.

"SETTINGS" MENU
"Recipe management" – to access recipe management (addition,
searching, modification, deletion, importing and exporting, etc.);
"Special" – to access special functions such as PowerCleaning,
etc.;
"Baking timer"- to access the configuration of the cooking timer
signals;
"ReadyToGo timer" – to access the settings related to the
programmed on and off times;
"Lighting" – to manually turn on/off the baking chamber lighting;
"General settings" – to access the general settings such as
Language, Date/Time, etc.;
"Service" – menu reserved for Technical Support for specific
functions such as Software Updates, System Resets, etc.
