TECHNICAL SPECIFICATIONS
1.1
DESCRIPTION OF THE APPLIANCE
The appliance consists of one or more baking chambers (up to
four) connected to a single touch-screen control panel (tablet).
Each chamber has electronic temperature controls, is equipped
with a thermocouple for greater precision in maintaining the
temperature, and a hinged door with hinges at the bottom.
Internally, the heating surfaces are made from refractory material
and the walls are made from aluminised sheet metal.
The appliance is factory-set to carry out the following cycles:
- Refining® and Regeneration for Pizza and Bakery products
- Baking for Pastry products
- Baking and Refining® for Gastronomic products
It can reach a maximum operating temperature of 290 °C.
The control panel (tablet) can be installed and connected to a
baking chamber via a cable; it can also be used remotely near the
ovens using the 2.4 GHz (wireless) radio connection.

WORKPLACES
The appliance is programmed by the operator using the control
panel (tablet), which can be positioned freely and has the ability
to program multiple units (up to four) simultaneously.
It must be supervised during operation.
The doors giving access to the appliances are located at the front
of the appliance.

IDENTIFICATION
For any communicating with the manufacturer or with the service
centres, always give the appliance's SERIAL NUMBER, which
can be found on the rating plate, fixed in the position indicated in
Fig. 2.

LABELLING
The appliance is provided with caution warning labels at the
points shown in Fig. 3.
CAUTION!
On the equipment surface there is a burn
hazard due to the presence of high temperature elements. For any
type of intervention or operation, wait for the appliance to cool to
room temperature and always use suitable protective equipment
(gloves, goggles, etc.)
CAUTION!
Presence of dangerous voltage. Before
performing any maintenance operations, turn off the power supply
by turning off the switches installed outside the appliance and wait
for the appliance to drop to room temperature. Always use suitable
protective devices (gloves, goggles, etc.).

This appliance is a technical working means which normally, at
the operator's position, does not exceed a noise emissions
threshold of 70 dB (A).

INSTALLATION
2.1
TRANSPORT
The appliance is normally shipped on a wooden pallet with ground
transportation vehicles (Fig. 4), protected by a plastic film or
cardboard box.

NOTE:
Upon delivery, it is recommended to check the
status and quality of the appliance.
Raise the equipment using only and exclusively the points
indicated at the pict. 5 with the use of bands.

ENVIRONMENTAL SPECIFICATIONS
For the good operation of the appliance, it is advisable that the
environmental values have the following limits:
Working temperature: +10°C to +40 °C
Relative humidity: 15% to 95%

CAUTION!
installing the following provisions must be met:
- Laws and Standards in force regarding the installation of
electrical appliances.
- Directives and indications issued by the electricity supply
network.

Assurance Corporation.
CAUTION!
The appliance must be installed on a
firm and levelled surface, perfectly leveled. The equipment
must never come into contact with flammable or combustible
materials.

Never obstruct or block the ventilation
space between the support surface and the appliance which is
created by the supplied feet.

Electrical connection must only be carried
out by specialised personnel, in compliance with current local
state Electric Quality Assurance Corporation requirements.
Before starting the connection procedure, check that the earthing
system is provided in accordance with European EN standards.
Before starting the connection procedure, check that the main
power switch for the supply to which the oven is to be connected
has been turned to the "off" position.
The rating plate contains all the information necessary for proper
connection.
Remove the protective film from the external panels of the
appliance by slowly peeling it off to remove the adhesive.
If this does not happen, remove the glue residues perfectly using
kerosene or gasoline.
In addition, the appliance must be positioned in a well-ventilated
place at a minimum distance of 10 cm from the left, right and
bottom side wall (Fig. 6).
Keep in mind that to carry out some cleaning/maintenance
operations these distances must be greater than those shown,
