Type of ice

250 g strawberries

115 g granulated

240 ml whipping
cream
240 ml milk
1 tsp vanilla extract
Lemon sorbet
350 g granulated
sugar
350 ml water
240 ml lemon juice
1 tbsp lemon zest
(finely chopped)
Ingredients
Preparation
 Wash the berries and cut into slices.
Stir approx. 70 g of granulated sugar
into the lemon juice and then macer-
ate the strawberries in the juice for 2
hours.
 Mix the remaining granulated sugar,
the milk and the whipping cream to-
gether until the granulated sugar has
dissolved.
 Add the juice of the macerated straw-
berries and the vanilla extract to the
milk mixture and pour it all into the
ice-cream maker. Add the strawberries
in through the refill lid during the last
5 minutes.
 Sweeten with sugar to taste and pro-
cess further in the ice-cream maker.
 Switch on the ice-cream maker. Set
a processing time of approx. 30–40
minutes.
 Place sugar and water into a pan and
bring to a boil over a medium heat.
 Allow the sugar syrup to simmer at a
low temperature for 2–3 minutes.
 Remove the syrup from the hob and
leave it to cool down.
 Once it has cooled down, add the
lemon juice and finely chopped lemon
zest.
 Switch on the ice-cream maker and
pour the finished lemon mixture into
the ice-cream maker.
 Set a processing time of approx. 30–40
minutes.
