240 ml milk
1 tsp vanilla extract

350 g granulated
sugar
350 ml water
240 ml lemon juice
1 tbsp lemon zest
(finely chopped)

Preparation
Wash the berries and cut into slices.
Stir approx. 70 g of granulated sugar
into the lemon juice and then macer-
ate the strawberries in the juice for 2
hours.
Mix the remaining granulated sugar,
the milk and the whipping cream to-
gether until the granulated sugar has
dissolved.
Add the juice of the macerated straw-
berries and the vanilla extract to the
milk mixture and pour it all into the
ice-cream maker. Add the strawberries
in through the refill lid during the last
5 minutes.
Sweeten with sugar to taste and pro-
cess further in the ice-cream maker.
Switch on the ice-cream maker. Set
a processing time of approx. 30–40
minutes.
Place sugar and water into a pan and
bring to a boil over a medium heat.
Allow the sugar syrup to simmer at a
low temperature for 2–3 minutes.
Remove the syrup from the hob and
leave it to cool down.
Once it has cooled down, add the
lemon juice and finely chopped lemon
zest.
Switch on the ice-cream maker and
pour the finished lemon mixture into
the ice-cream maker.
Set a processing time of approx. 30–40
minutes.
