Place the heel of the knife (closest
to the handle) against the tip of the
sharpener. With the knife at an angle,
usually about 20 degrees, to the
sharpener, swipe it against the side
or sharpener using an arc motion, as
shown in the figure.
Repeat the procedure on the other
side so that both sides of the blade
are sharpened.
Continue until the knife is as sharp as
you want it to be, probably about 10
times on each side. Be careful when
you check the sharpness of the knife!
Cleaning
After the sharpener has been used
for some time, it is normal for black
marks to appear on the surface.
These are caused by contact with the
metal of the knife, and simply mean
that the sharpener is doing its job. If
necessary you can wash and dry the
sharpener by hand, but this will not
get rid of the black marks.
