Food cooking information

• PLEASE read and follow this advice when cooking.
• ALWAYS wash your hands before and after handling uncooked meat and before
eating.
• ALWAYS keep raw meat away from cooked meat and other foods.
• ALWAYS ensure tools are clean and free of old food residues before cooking.
• ALWAYS ensure all meat is COOKED THOROUGHLY before eating.
• DO NOT use the same utensils to handle cooked and uncooked meats.
• CAUTION – eating raw or under cooked meat can cause food poisoning
• To reduce the risk of under-cooked meat, cut open to ensure it is cooked all the
way through.
• CAUTION – if meat has been cooked sufficiently the meat juices should be clear
and there should be no traces of pink/red juice or meat colouring.
• Pre-cooking large pieces of meat and joints is recommended before finally
cooking in your Firebox.
• After cooking always clean any utensils you have used.
Before cooking commences any foods that contain or are coated in fats, oil, or
butter should not contact the Firebox cooking chamber directly as the stone will
absorb any fats, oils and butters and can cause staining, odours, smoking and
could corrupt the flavour of any future items cooked. Instead these items should be
placed on to a metal baking sheet, metal pan or a cast iron skillet.
PLEASE NOTE: Do not pre-cook pizza, pizzas are cooked directly on the stone base
of the Firebox.

Troubleshooting

Why does my pizza base burn before the toppings are cooked?
Your Firebox is too hot. Reduce the heat on your BBQ, this will allow your toppings
to cook evenly and in time with the base OR your pizza base is too thin.
Why is my pizza base 'soggy'?
Your base is too thick. Roll the base thinner before adding your toppings.
Why are my toppings not cooking properly?
You have overloaded the pizza. Reducing the amount of toppings on your pizza
will help them to all cook through evenly.
