Formula F0*
The F0 theory tells us that the products accumulate heat proportion-
ally to the time and temperature at which they are. Therefore, if we
want to sterilize at a certain temperature, the lower temperatures also
accumulate heat in the products, influencing the final result. To calcu-
late the heat, the theory gives us a table of F0 where a F0 is indicated
for each of the temperatures during 1 minute:

For this reason, the sterilization F0 factor that the product must re-
ceive by time, the set point temperature and the F0 table is calculated.
Once the equipment has been heating and has reached the minimum
temperature of F0, it will accumulate the F0 factor of the current tem-
perature to the F0 factor accumulating until it reaches the F0 factor of
sterilization. As a result, we can have the sterilization phase last less
than it indicates in the time set in the selected program, or even, that
the sterilization is completed before entering the sterilization phase,
since the product will have reached 100% of the F0 factor of steriliza-
tion during the previous phases.
