HIGH TEMPERATURE COOKING
1. Light the charcoal according to the lighting instructions. Do not move the charcoal once it is burning so
that it burns evenly.
2. Open the bottom vent fully and leave the lid open for about 10 minutes to get embers.
3. Close the cover and open the top and bottom vents fully.
Once the desired temperature has been reached, you can cook with your Kamado according to the
cooking guide.
SMOKING
1. Light the charcoal according to the lighting instructions. Do not move the charcoal once it is burning so
that it burns evenly.
2. Open the bottom vent fully and leave the lid open for about 10 minutes to get embers.
3. Close the cover and the top vent. Leave the bottom vent slightly open.
4. Once the desired temperature has been reached, you can use your Kamado for smoking by following
the cooking guide.
5. Using heat-resistant gloves, place smoking wood chips on top of the hot charcoal. You can first soak
the chips in water for 15min to prolong the smoking process.
COOKING GUIDE
1. Wait at least 30 minutes until the coals have burnt down to a clear film of ash before placing the food
on the Kamado grill.
2. Never prod meat with a fork while cooking, it will lose its juices and dry out.
3. Use a spatula or tongs to turn the meat. Do not add salt at the beginning of cooking, as this will cause
the meat to shrink and lose its flavour.
4. Avoid flattening ground meats, as this will only extract the delicious flavours.
5. For optimal cooking, do not lift the lid every minute to check the food is cooked. The heat will escape
and the cooking time will be prolonged. This will also prevent the food from flaring up and turning black.
The lid also allows you to use the rotating heat and will make your food softer when cooked.
• The cooking grid heats up quickly and keeps the heat even. It can be used for all types of cooking.
