Nonstick cooking spray

pounds (about 4 medium) russet potatoes

Olive oil, for spraying or brushing
1 . Cut potatoes into 1/4-inch thick pieces, about 4 inches long .
Pat dry completely .

1 . Prepare Chipotle Mayonnaise: Put mayonnaise, chipotle and lemon
juice in the work bowl of a mini food processor . Process on High until
