• Prepare a new dough sheet only after the previous one has been completely
processed into pasta.
• Before placing the dough sheets on the cutting rollers, we recommend to
cut them into pieces of about 25 - 30 cm length. this facilitates the
production of noodles
.
• if the dough is not uniformly rolled out or cut, remove possible dough
residues from the bottom of the rollers or cutting rollers using a wooden
stick or paper towel.
• if too much dough adheres to the underside of the rollers, the dough is
too dry or too wet.
Basic recipe for pasta (serves 6 persons)
500 g flour
