Making dough sheets
• Pull the adjustment knob outwards, at the same time turn it to position 7,
so that the two rollers have the largest distance to each other
(dough thickness: 3 mm). Pass some dough through the rollers by turning
the crank
and simultaneously pressing the dough with light pressure on
the rollers.
• fold the dough once and sprinkle it with a little flour
in the middle of the rollers and pass it through them again.
• repeat this process 5 to 6 times, until the dough has a uniform shape.
• now pull the adjustment knob outwards and turn it to position 6. the
distance between the rollers decreases. let the dough pass through the
rollers again.
• then adjust the knob to position 5 and let the dough pass through the
rollers again. continue until the dough has the desired thickness
(position 1: 0,5 mm)
• now the dough sheet can be further processed according to the recipe.

Making pasta

• fix the cutting attachment on the fasteners of the pasta machine
sure that the pasta machine is properly fixed on the countertop and insert
the crank into the opening of the cutting attachment.
• sprinkle both sides of the dough sheet with flour and place it on the cutting
rollers.
. Place the dough
• By turning the crank the dough sheet is pulled in and cut into the desired
shape. for a perfect result pay attention that the dough sheet does not
warp
• loosely spread the noodles on a clean dish towel, if necessary sprinkled
again with a little flour, and allow to dry for about 30 minutes for further
processing.

tips and tricks
• Process the dough in small pieces, so that the sheet does not become too
long.
• to prevent the dough from drying, store it up wrapped in cling film until
further processing.
