start the cooking cycle (the yellow indicator light turns on straight
away),
- to stop the cooking cycle press this button for 1,5 seconds (the
yellow indicator lamp will turn off).
1 - Cooking type selector "convection", 25 to 300°C - preset to
150°C.
2 - Cooking type selector "steam/convection" cooking, 25 to
250°C - preset to 150 °C.
3 - Cooking type selector "saturated steam" with the tempera-
ture in the oven chamber fixed at the water boiling point.
4 - Cooking type selector food "regeneration cycle", 25 to 250
°C - preset to 140 °C.
This carries out a steam/convection cycle with controlled humid-
ity, a temperature of 140°C (adjustable), using full power
(adjustable).
Note: The regeneration cycle is best used for heating up numer-
ous portions of food with different times which means that the
door will be opened frequently. For this reason the cycle carries
on working with the door open reducing the heat loss in the oven
chamber to a minimum; -therefore beware of superheated
steam which escapes when the door is opened-.
6 - Cooking type selector "thermostatically controlled steam"
cooking between 15 and 99°C, preset to 85°C.
This cycle is particularly indicated for cooking or regenerating
food contained in sealed vacuum packs (cuisson sous-vide).
D - Cooking type selector "COOK&HOLD"
This procedure is ideal for cooking large joints of meat (eg. leg of
pork which requires a lengthy cooking time at low temperature).
This procedure is used for both the cooking phase (COOK) and
the maintaining phase (HOLD).
The temperature control during the cooking phase (COOK) can
be worked by using the meat probe.
The choice of this mode will automatically force the appliance to
function in the reduced power mode (led of the button "E" lit) and
will only allow the use of the convection cycle (button "1"), the
thermostatically controlled steam cycle (button "6") or the
steam cycle (button "3").
E- Selector switch full power/reduced power
If this button isn't pressed the appliance will work at full power and
the ventilator fan will rotate at the default speed. When the
"SOFT" led lights up the appliance is working at reduced power
and the ventilator fan rotates at reduced speed.
F- Displaying the set parameters.
Pressing the button "F" turns the incorporated indicator light on
and off. When the led is on the cooking parameter displays G2,
H2 or I2 flash the values relative to the oven chamber tempera-
ture, the cooking cycle times and the meat probe temperature
specific to the active stage.
G2 - Indicator light displaying the cooking chamber tempera-
ture for the active stage, or displaying error codes during function
failure.
- When the button "F" is "on" this display flashes the set
temperature.
- When the button "F" is "off" this display continuously indicates
the actual oven chamber temperature.
G1- Lit up when the oven chamber heating is on.
G - Setting knob:
• Oven chamber temperature, increasing the temperature when
rotated towards the (+) sign and reducing the temperature when
rotated towards the (-) sign.
Note: With reference to the saturated steam cycle, button 3, the
thermostatically controlled cooking is excluded.
H2 - Cooking cycle time indicator.
- When flashing it indicates the set time.
- When continuously lit it indicates the remaining time to the end
of the actual cooking cycle.
The indicator is divided into 2 sectors:
- The left-hand sector for hours ( 0 to 8)
- The right-hand sector for minutes (00 to 59)
The word "cont" appearing on the display indicates a continuous
cooking cycle.
H1 - The led lights up when a timer cycle is operating.
H - Setting knob:
• Cooking cycle time, rotating towards the (+) sign increases
the time up to 8 : 00 hours after which the continuous cycle "cont"
becomes operative. Rotating towards the (-) sign decreases the
time.
I2 - Display indicating the temperature at the core of the
product via the meat probe or displaying error code Ept3 during
function failure.
- When the button "F" is "on" this display flashes the set
temperature.
- When the button "F" is "off" this display continuously indicates
the temperature of the meat probe.
I1- The led lights up when a meat probe cycle is operating.
I - Setting knob:
• Meat probe temperature, from the default value of 50°C up
to 99°C rotating towards the (+) and 0°C rotating towards the (-
).
• meat probe is excluded when the temperature in "I2" is
lower than 0°C.
Note: Setting a temperature value on the probe temperature
indicator "I2" will cancel whatever time value is present in "G2"
and viceversa. It follows therefore that cooking using the meat
probe does not require you to set a cooking time.
L - Manual oven chamber humidifying button. When acti-
vated water is sprayed into the cooking chamber towards the
ventilator fan.
This function is only possible while the ventilator fan is operating.
It is also used to introduce water into the oven chamber during
the cooling down process to temperatures less than 70°C with
the door open. For values of between 70 and 180 °C water intake
is automatic.
M - Oven chamber cooling button with the door open.
When this button is pressed it enables or disable the oven
ventilator fan maximum speed function and overrides the door
safety devices.
This button works in two ways:
- during an active cooking cycle (temporary-stop= door open =
led "C" flashing) only the ventilator fan is active. This function
could be used to cool down food that has just been cooked.
- at the end of the cooking cycle (led "C" off) the ventilator fan
operates and water is sprayed into the cooking chamber when
the internal temperature level is between 180 and 70°C.
This is a rapid cooling function which may be continued by
manually intaking water by pressing the button "L".
N - Button activating the "CLEAN" cycle.
(see the relative paragraph under cleaning and maintenance).
P - This led indicates an excessive build up of limescale in the
steam generator and therefore that the boiler requires mainte-
nance.
Q - Led indicating:
• Steam generator water loading cycle when the red led is
flashing.
• Steam generator water preheating cycle when the red led is
permanently lit.
- Steam generator ready when the led is off
RB - Burner release button, steam production.
RC - Convection burner release button.
T
- Triple action door handle:
• Ist movement: safety opening movement which allows
the
steam to escape
• 2nd movement: releasing the door handle
• 3rd movement: complete opening.
Note: The door must be forcibly closed
(slammed).
