selected directory. Press "OK" to perform the export operation. A
message will show the number of the program correctly copied from the
oven memory to the USB device. Remove the USB device and refit the
previously removed plug.
NOTE: the <NO DIRECTORY> message means that there is no
USB or that it has not been correctly inserted into the slot.

STARTING UP THE BAKING CHAMBER WITH THE
STEAMER
This function allows "calibrated" amounts of steam to be emitted into
the baking chamber.
To enable the function, press "MENU", select the STEAM
INJECTION item with the "SELECTION" keys (↑ and ↓) then press
"OK" to open the submenu.
Scroll through the list using the "+" and "-" buttons to select the
following items.
-
"On"/"Off": To switch the steam boiler on or off
-
"Steam injection": emits steam into the baking chamber
-
"Steam duration": sets the amount of steam, measured by the time
the electrovalve remains open.
Scroll through the list with the "SELECTION" keys as far as the
required item and press "OK" to confirm.
For the "Steam duration" item, change this parameter with the "+" and
"-" keys and then press "OK" to confirm. To return to the previous
screens without saving, press the "RETURN" key one or more times.
Once enabled, the main display will contain an icon to show that the
"Steam" function is on (fig.33). The flashing steam icon shows that
the boiler is heating up. The non-flashing steam icon indicates that the
boiler has reached working temperature and that the steam is ready to
be emitted. During the steam injection stage, the white icon becomes
light blue for the amount of time set for "Steam duration".
There is no dedicated key for the "Steam" function. If steam is used
frequently it is suggested that this function be assigned to the
"HOTKEY" (see 3.5.3) This will associate functions to the key
allowing the boiler to be controlled directly without the need to open
the dedicated menu:
-
press once: to inject steam into the baking chamber ("steam
injection" shortcut)
-
hold down: to switch the boiler for steam production on/off
("On/Off" function shortcut)
NOTE: It is not possible to emit steam if the boiler has not been
enabled and/or has not reached the correct temperature to
produce steam.
When using programs containing at least one steam injection, the
boiler is switched on automatically. Switch on Timer 1 (T1) so that the
steam is discharged automatically at the programmed times.
To use Timer 1, refer to 3.2.2 ("BAKING TIMER" section). To create
programs containing the steam injection function, refer to 3.3.
In any case, the oven STOP will also deactivate Steamer heating.
3.4.1
DISCHARGING VAPOUR
Discharge of the vapours that form inside the baking chamber is
enabled using the ball knob on the front left hand side of the Oven
(fig.23).
When the ball knob is pulled out. The exhaust outlet is open, when the
ball knob is pushed towards the oven, the outlet is closed.

ADDITIONAL BAKING CHAMBER SETTINGS
The equipment has further settings that are available from the main
menu. To access these functions, press the "MENU" key then scroll
through the list with the "SELECTION" keys until the required item.
Press "OK" to open the submenu.
3.5.1
LIGHTING
Used to switch the lighting on and off inside the baking chamber.
Select this menu item to manage lighting manually. The lighting status
is represented graphically on the display by a check symbol on the
right of the menu item. This check symbol means that the lighting is
on.
3.5.2
CLEANING
The "Clean Oven" function can be used to eliminate cooking residues
on the inside walls of the oven by means of carbonisation. When the
function is selected, this starts the program, set to high temperatures,
for a factory set period of time. When the program has completed and
the oven is again at room temperature, it is sufficient to remove the
charred residues with a brush.
Start the "Cleaning" program by selecting the CLEANING item with
the "SELECTION" keys and press "OK" to confirm. The display will
show an icon and the message "Cleaning program in progress".
If on, the chamber lighting will switch off automatically.
At the end of the program, the oven will enter STOP mode, switching
off the power supply to the heating elements and making a buzzer
sound to warn the operator that the cleaning program is complete. The
display will read "Cleaning program completed". Press "OK" to quit
and proceed to switch off the appliance ass described in 3.9.
To stop the Oven Cleaning Program in advance, press "RETURN".
NOTE: The steam exhaust valve needs to be shut during the
cleaning program and until it is completed. At the end, it is
recommended to open the valve to allow steam to be discharged.
3.5.3
HOTKEY
The "Hotkey" function ("star" key) is a key that can be customised for
direct access to a specific function, as chosen by the user.
Open the "Hotkey" menu to view the current setting, which will be
highlighted. To assign a different function to a "Hotkey", move the
highlighting with the "SELECTION" keys to the required item and
press "OK" to confirm.
If necessary, press "RETURN" until you return to the main screen.
Pressing the "Hotkey" will directly enable the selected function.
3.5.4
SWITCH ON TIMER
This function can be used to order timed start-up of the oven, setting up
to two different on and off times for every day of the week (fig. 21).
Scroll through the list using the "SELECTION" keys to select the
following items:
-
"Enable/Disable": enables/disables the on timer
-
"Settings": To manage the on/off programmed times
Scroll through the list with the "SELECTION" keys as far as the
"Enable" and press "OK" to confirm and enable the function. If no
switch on/off times are present, the "Settings" screen will open to
enter at least one switch on/off time.
Use the "SELECTION" keys to position the cursor on the time field
for the day of the week to be programmed. The days of the week are
set out on 4 pages. The switch on times are graphically represented by
"ON" and the switch off times with "OFF". Times are graphically
represented as HH:MM. The symbols //:// show that switch on/off are
disabled.
Use the "+" and "-" keys to increase/reduce the selected field. In the
HH field, select the "//" symbol to disable a specific timer. At the end of
the setting process, press "OK" to confirm. Press "RETURN" to go
back to the previous screen without confirming the changes.
When the switch on timer is enabled, the top bar contains the "On
Timer" icon (fig.17 item I), while when the oven is in STOP mode, the
status bar messages also include the next time time the oven will be
switched on, using the format "ON dd hh:mm". While the oven is
switching off, the status bar will read "OFF dd hh:mm".
The settings table needs to be completed with even just one "On" to
activate the function: the oven will switch on at the first "on"
chronologically enabled and which it encounters in from the moment it
is enabled.
NOTE: Setting an "On" without setting a subsequent "Off" will still
be considered an active setting: the oven will turn on automatically
at the time set, and will have to be turned off manually. In the same
way, setting "Off" that does not involve a prior "On" will also be
considered an active setting and the oven will switch off
automatically at the set time, if it was manually switched on
beforehand.
At the switch on (or off) time, an intermittent buzzer will sound and the
status icon for the timer will flash to warn of imminent switch on (or
off). This switching on or off may be interrupted by pressing the STOP
(or START) keys.
WARNING! The sound alarm serves to signal that the equipment is
about to start up and therefore, anyone within its radius of activity
for any reason must move to a safe distance or disconnect the
equipment from the power supply; the above function and relevant
risk must be made known to all those who might be in the vicinity
of the equipment for the purpose of safeguarding them against
accidents or injury.
Once the oven has started up (or has switched off) at the set time, the
"Timer" function remains operational. Therefore, if no changes are
made, one week later at the same time, the oven will start up (or shut
down) again.
NOTE: If the operator forces an oven start-up when the timer is
switched on before the set time, then the oven will start up normally
and at the start-up time set for the timer, everything will proceed as
usual (the oven is already on and therefore no buzzer will sound).
The same thing happens if the oven is already off at the time set for
shut down.
NOTE: If there is a power outage while the timer is engaged,
(Blackout), no important parameter will be changed and This is as
long as the power returns before the set switch on time.
NOTE: The control unit, powered by furnace in STOP, is equipped
with an internal timer after which automatically turns off the
