to cancel the working mode (YES) or to continue working in
it (NO).
Once the required value has been selected, press the ENTER
key to confirm the order.
The following figures show an example of the function displays
in this operating mode.

The symbol corresponding to this function is displayed at the
bottom right-hand side.
In this operating mode, the entire cycle of the machine is ca-
rried out. In other words, conservation of the product at an
adjustable temperature, definition of the time baking starts,
increase to the fermentation temperature and control of the
relative humidity. This operating mode is also known as con-
trolled fermentation.
For programming in this working mode, proceed as follows:
Press the < COLD+FER > key (5)
The display suggests a day and time for baking, according to
the last one used.
BAKING:
WED. 08:00
OK?
YES
If you press the < ENTER > key, this indicates conformity with
the suggested day and time, while also maintaining the last
parameters that were set.
If you want to modify it, press the <
key to select (NO), followed by the ENTER key, this indicates
that the suggestion is not accepted and the following message
appears on the display:
