Focaccia
Ingredients
350 grams of bread flour
150 ml water
15 fresh yeast 2 teaspoons extra virgin olive oil
As dressing:
80 ml extra virgin olive oil
1 teaspoon semi-coarse salt. I used salts herbs and spicy salt
spices to taste
Elaboration
Dissolve yeast in half glass of warm water and do the same with salt. Sift the flour into a large bowl
and mix with yeast and gradually pouring the remaining water, salt water and finally the oil.
Leave the dough onto the work table and manipulate it in 10-15 minutes with energy, until it is
smooth and elastic. Cover dough with a damp cloth and let rise for an hour in a warm place.
Knead by stretching and manipulating it back a few minutes, sprinkle with flour and flatten by
pressing with your fingers on a baking tray covered with parchment paper dipped in oil, until it is half
a centimeter thick.
No smoothing the surface to be a bit too rough. Dress with oil and semi-coarse salt and the chosen
spices, thyme, basil, oregano etc.
Bake at 200 degrees for 25 minutes in the preheated oven, until the surface is golden brown.
A popular variation of this recipe is to add the seasoned oil a couple of cloves of crushed garlic
(crushed), thus obtaining a focaccia style garlic bread.
A very thin slices of Parmesan cheese on fresh baked focaccia will add a unique touch to this recipe.

Elaboration
