RECOMMENDATIONS FOR USE
– The pre-heating phase of the cooking chamber is very important and useful to achieve
a good cooking result.
It is recommended to always pre-heat with the cooking chamber empty (set a higher
temperature, of about 15-25% compared to that desired for the subsequent cooking).
In the case of steam cooking, pre-heat the empty cooking chamber well in "Convection"
mode as it allows a temperature of more than 130°C to be set.
– The depth of the baking trays must be suitable for the height of the product. To achieve
even cooking it is preferable to distribute the load onto several lower baking trays rather
than load just one deep one.
When you load the appliance consider not only the weight, but also the size, consistency
and thickness of the product.
– Do not introduce baking trays and/or containers with liquids into the appliance at a
height greater than 1,6 m.

– Pre-heating and loading of the appliance must take place in compliance with the quality
and characteristics of the products.
For example, frozen spinach must not be attacked with too high temperatures because,
due to their nature, they could dry out on the outside and compromise the cooking result.
– To achieve optimal results, it is essential to use the baking trays in relation to the differ-
ent types of products: aluminium or aluminium-clad plate for confectionery and bakery,
perforated trays for steam cooking, mesh baking trays for pre-fried products (e.g. pota-
toes).
– When placing the products to be cooked in the cooking chamber, it is recommended to
pay particular attention in order to maintain sufficient space between one tray and an-
other. This allows the heat and air to be distributed evenly and obtain a more uniform
result, which would not be achieved if the product on one tray is in contact with the tray
above.
– With this kind of appliance you can almost reduce to zero the use of condiments, oil,
butter, fats and flavourings. This allows you to enhance the flavours of the products and
to maintain nutritional content unaltered for the benefit of a more dietetic cuisine.
