Classic Dijon Salad Dressing
Ingredients:
2 egg yolks
⅛ cup lemon juice
⅛ cup white wine vinegar
2 tablespoons Dijon mustard
1 teaspoon Tabasco
sauce

Sea salt and white pepper to taste
2½ cups canola oil
Directions:
1. Add egg yolks, mustard, vinegar, and lemon juice to blender. Set blender
to 10 and blend for 30 seconds.
2. Set blender to 5 and blend, slowly adding oil until thick, pourable
consistency is reached. If the dressing is too thick, add a little warm water to
thin out.
3. Season dressing with salt, pepper, and Tabasco
