5.5 Ventilation:
n A steam ventilation hood is not absolutely stipulated for
the operation of the unit. If a hood is installed, the
following should be noted:
n VDI Guideline 2052 as well as the guidelines of the
local building commission for steam exhausts and
ventilation chimneys, respectively the relevant guidelines
and regulations in each country must be observed.
n Hood should protrude 300-500 mm over the front side
of the unit.
n Install the grease filters in the protruding area of the
hood.
n The grease filters should be removed and cleaned in a
dishwasher regularly. Note the manufacturer's
statements.
n An adequate amount of incoming air must be ensured
when operating the ventilation hood. Also see the table in
Chapter 6.

5.6. Connection of a communication interface
n All Convotherm steamers are fitted with a RS232
communication interface. To connect a PC by means of
this RS232 interface cable Part-No. 5009315 is required.

n When assembling the ventilation hood onto the unit,
make sure that the unit is secured against tipping,
especially with a stacking unit and when the unit is on a
stand with wheels.
n Always switch on the ventilation hood when the
combination oven steamer is operating. Otherwise
condensation can accumulate in the hood.
n If a ventilation hood is to be installed, we recommend
the original Convotherm Ventilation Hood Type 3408872
for the unit sizes CONVOTHERM 6.10 and
CONVOTHERM 10.10. A ventilation hood is available for
the unit size CONVOTHERM 10.20 upon request.
