Electric Supply (C)
2.1 Implementation
n The unit's electrical connections (refer to "C" in the
dimensional drawings at the end of the handbook) must
be carried out by a qualified electrician in accordance with
the local power supply company regulations. Note the
information in this Installation Handbook and on the
nameplate.
n Before connection, check the data on the nameplate
and wiring diagram for compatibility with the local supply.
n An all-pole isolation switch with a minimum contact
opening of 3mm must be located close to the unit (on
site). The unit must be isolated during cleaning,
installation or repair work.
n The unit must have equipotential bonding. (Connection
refer to "D" in the dimensional drawings at the end of the
handbook).
n In accordance with the latest installation regulations,
the unit is protected against residual current using circuit
breakers with an applicable current rating.
n The terminals are behind the removable left side wall in

the service connection area.
n A wiring diagram and a spare parts list are situated in
Pic. 11
the connection area.
n Check that all cable connections in the electrical
connection area are tight before putting the unit into
operation. They can loosen under transport.

2.3 Check Direction of Motor
n Check the customer's rotary field (right rotary field).
n When looking into the electrical connections area, the

direction is clockwise from left to right.
(see red arrow on the motor).

n The electrical cable must be equivalent to type H07RN-
F, thus meeting the DIN VDE 0282
standard (or comparable). Tighten the screwed cable
gland (strain relief).
n In factory testing, the unit had a leakage current under
5mA.
n The respective specifications and regulations in the
countries concerned must be adhered to.
n For connection of the hot air steamer to an energy
optimization system / floating contact (e.g., Sicotronic):
–
from the control for the kitchen process control technology (signal
contact closed à unit is turned on).
–
optimization.

the steamer switches over to the energy-saving mode.

connect an energy optimisation system.

- Minimum on time 8min
- Maximum off-period 30 sec.
- Negligible increases in the heat-up and
cooking times can occur when operating
through an energy optimization system!
