USING THE PRESSURE COOKING
IMPORTANT: READ THE SAFETY TIPS CAREFULLY BEFO-
RE USING THE PRESSURE COOKER.
1.BEFORE USING THE COOKER FOR THE FIRST TIME
With the cooker empty, close the lid several times. The ope-
ration is simple but requires a certain amount of practice.
Before using it for the first time, wash the cooker with hot water
and washing-up liquid. Then rinse it and dry it with a soft cloth.
The cooker is then ready for use.
2.FILLING THE COOKER
Follow the instructions for filling the cooker as given in the
section on "SAFETY PRECAUTIONS".
3.CLOSING THE COOKER
Before closing the cooker, proceed as follows:
1 - Check the elasticity of the rubber seal and that it is clean.
Make sure the edge of the cooker where the seal fits is also
clean. If the seal is cracked or hard, replace it with a new one.
2 - It is VITALLY IMPORTANT that you check the functioning
of the safety valve from time to time, inserting a pin and chec-
king whether the spring works (N.2).
3 – Check that the rotary valve is turning.
To close the cooker, line up the mark on the lid with the
mark on the handle. Press the lid as shown in N.3 and turn it
from right to left until the two halves of the handle come to-
gether. When this happens, a sliding catch locks to prevent the
cooker from opening unless the button is pressed.
If it is not easy to turn the lid when opening or closing the
cooker, apply a little cooking oil.
4.COOKING
Place the closed pressure cooker on the cooker ring, with
the ring on its highest setting.
Start counting the cooking time from when the rotary val-
ve starts to turn with steam coming out of it. Then reduce the
power to a lower setting so that the valve rotates slowly.
During cooking, it is normal for a small amount of steam to
come out of the rotary valve.
If you are using a gas cooker, check the gas flame at the
start, making sure it does not exceed the pressure cooker base
and that the pressure cooker is centred on top of the flame.
This will save on power and prevent damage to the handles
and sealing gasket.
5.OPENING THE COOKER
When the cooking time is over, open the cooker using one
of the following methods:
1. Remove it from the heat and allow it to cool
For safety reasons, when you can see there is no pressure
left remove the rotary valve and then press the button until
the excess pressure is released. Turn the lid from left to right
until the marks are in line with each other (N.4). Then, remove
the lid (N.5).
With this method, the temperature falls slowly and the
food continues to be cooked, which means that cooking times
should be reduced accordingly.
2. Fast cooling
Place the pressure cooker under the tap and run water over the
lid until you can see there is no pressure left (this will take around
two minutes). Then, press the button and open the cooker.
When using this method, do not touch the cooker, which
could cause burns.

SAFETY PRECAUTIONS
Read the instructions to avoid damage through incorrect use.
Each time it is used, check that the pressure valve, the safety
valve and the rubber seal work correctly, as indicated in the sec-
tion "CLOSING THE COOKER".
Under no circumstances should you interfere with the above
safety elements. If you think one of them may not be working
correctly, take it to the place where you bought it or to a tech-
nical service centre. If any of the parts of the cooker need repla-
cing, make sure the spares used are ALZA originals, which always
come in the manufacturer's original packaging. The use of spares
that are not ALZA originals renders the rights to the warranty
and civil liability cover provided by the manufacturer void.
The minimum amount of liquid (water, meat stock, wine,
etc.) to be used shall be 1/4 litre. This ensures steam circulation
and prevents damage to the cooker.
The maximum amount is 2/3 the capacity of the cooker.
However, if you cook food that forms froth or which swells up
while it is being cooked, such as meat stock, rice, pulses, etc.,
do not fill the cooker more than 1/2 its capacity. This prevents
food from flying out when the cooker is opened, which could
cause burns.
When cooking solid food, make sure they do not block the
safety elements on the lid. Remember that solid food sometimes
swells when cooked. When cooking meat with skin, such as ox
tongue, etc., do not prick the swollen meat, as you could get
burnt.
When cooking pasty food, such as lentils, etc., shake the
cooker before opening. This will prevent the bubbles of steam
splashing when the lid is removed, which could cause burns.
Never try to open the cooker by force when it is still under
pressure. If you want to open it, follow the instructions given in
the corresponding section, "OPENING THE COOKER".
Keep an eye on the cooker when it is being used and keep it
out of children's reach.
Do not touch the hot surfaces; always use the handles. If you
need to use gloves, keep your hands out of the danger area.
Do not use the cooker in the oven or the microwave. Similarly,
do not use it to fry food under pressure.
Use the cooker only for what it has been designed.
Never use bleach.
This is a pressurised appliance. Misuse of the pressure cooker
could cause scalding. Make sure it is correctly closed before hea-
ting it.
Use a suitable source of heat, as described in the instructions
for use.
Never fry food in a lot of oil with the pressure cooker in pres-
surised mode.
Keep this instructions booklet in a safe place.
