Mountain Trout with Green Sauce
Ingredients:
4 small mountain trouts, scaled and gutted.
Salt
Black pepper
Sauce:
½ cup packed fresh flat leaf parsley leaves
2 tbs lemon juice
¼ cup olive oil
1 small garlic clove, chopped
Black pepper
Method:
1. Combine the olive oil with the parsley, lemon juice, garlic and black pepper in
a blender, and blend until smooth.
2. Fill the water reservoir to the MAX level. Insert the drip tray and place the
steamer basket on top.
3. Place the trout in the steamer basket and cover with the lid.
4. Set steaming timer to 10-12 minutes.
Marinated Fish with Mushrooms
Ingredients:
4 white fish fillets (1/2 Lb)
2 tbs sherry
4 tbs soy sauce
1 teaspoon sugar
Salt
4 slices fresh ginger root, shredded
2 scallions cut in 1/2-inch sections
5 dried black mushrooms (soaked), shredded
Method:
1. In a large bowl, combine the soy sauce, sherry, sugar, salt, ginger, scallions
and mushrooms. Reserve half of the marinade. Add the fish fillets to the other
half, cover and refrigerate for about 1-2 hours.
2. Fill water reservoir to MAX level, insert the drip tray and place the steamer
basket on top.
3. Remove fish fillets from the marinade, place into the steamer basket and
cover with the lid.
4. Set steaming timer to 10 minutes.
5. Transfer the fish to a serving platter and serve the marinade as a dipping
sauce.
