Cooking with a Fagor pressure cooker

NOTE: FAGOR PRESSURE COOKERS ARE FOR DOMESTIC KITCHEN USE. THEY ARE
NOT FOR INDUSTRIAL KITCHEN USE.
Before using it the first time
To open the pressure cooker slide the opening button forwards
(Fig.4) and turn the lid anti-clockwise, holding bottom cooker
handle with your left hand and raising the lid. Before using the
pressure cooker for the first time, wash all the components
in warm water with washing-up liquid. Rinse and dry well The
cooker body can be placed in the dishwasher, but we recom-
mend washing the lid and its components by hand. Always
remove the silicone seal when washing the lid. Wash the seal
in warm soapy water, rinse and dry well. Cover the seal with
a fine layer of cooking oil (olive, sunflower, etc.). Follow this process every time you wash the
pressure cooker to lengthen the useful life of the seal and facilitate cooker closure.
How to add food and liquids

To cook you must add 250/300ml of liquid to the cooker per 15 mins. cooking or less coo-
king or 500ml of water if cooking over 15 mins. to generate steam. NEVER USE WITH LESS
WATER. It's important to always use some kind of liquid when using the pressure cooker, as
the liquid must generate steam to create pressure. Without liquid the pressure cooker cannot
generate pressure. You may use as a liquid: water, stock, wine or any other liquid to cook except
oil. Oil can be used to brown meat or sauté onion prior to adding the other ingredients; however,
OIL MUSTN'T BE THE SOLE LIQUID for cooking.

Never fill the cooker more than 2/3 capacity (including liquids and solids), because suffi-
cient space to generate pressure is necessary. Only fill the cooker to ½ its capacity when
cooking foods that swell and/or create froth during their cooking like garden peas and other
pulse vegetables and grains. Fill only to half capacity when making soups or concentrated stock.

Liquid and foods can be directly added to the pressure cooker or steam cook placing the foods
in a stainless steel basket (sold separately) located on the metal support (sold separately)
when instructions or the recipe thus require. For this, place the support on the cooker bottom,
adding at least 750ml of liquid and place the basket (sold separately) with the foods on top.
