Cranberry Pudding
Ingredients:
1 cup cranberries, cut in half (can be frozen, or craisins)
2 tsp. baking powder
1 1/3 cups flour
Pinch salt
1 egg
1/3 cup hot water
1/2 cup molasses
For sauce:
1 cup butter
1 cup cream (whipping or Half and Half)
2 cup sugar
Few drops of vanilla extract
Method:
1. Sift flour, powder and salt. Beat egg, water and molasses. Mix all together
carefully and add cranberries. Pour into the rice bowl and cover with foil.
Steam for 1 hour and check for doneness by inserting a knife into center. If it
comes out clean, it is done. If not, add an extra 20 minutes.
2. While pudding is steaming, prepare sauce: mix butter, sugar and cream and
boil, stirring often until slightly thick. Add a few drops of vanilla (this will cause
sauce to swell up and boil over so be prepared). Pour hot sauce over pudding
slices.
