SPECIAL MAINTENANCE
5.1
PRELIMINARY SAFETY OPERATIONS
WARNING!
All maintenance operations and repairs must be
carried out using suitable accident prevention equipment, by
specialised and properly licensed technicians, recognised and
approved by the manufacturer.
Before performing any maintenance operation, disconnect the power
supply by turning off the switches fitted on the outside of the oven
and/or the leavening compartment and remove the plugs from the
power sockets.
All precautions are of importance to ensure that the oven remains in a
good state, and failure to observe them may result in serious damage
which will not be covered by the warranty and in exposure to risks
WARNING!
Regularly and any time that an anomaly occurs,
the appliance must be inspected by a
a specialist technician who must check its condition.
WARNING!
Some operations, listed here below, need to be
carried out by at least two people.
5.2
ROUTINE CLEANING
After carrying out the operations described in point 5.1 above, clean the
appliance as follows.
Clean the appliance overall on a regular basis. After leaving it to cool
down, carefully remove, from internal and external parts, all residues that
might have collected during cooking, using a damp sponge or cloth and a
little soapy water, if necessary. Rinse and dry the areas, being sure to wipe
parts with satin finish in the direction of the finish.
WARNING!
Carefully clean off regularly any fat or grease
that may have dripped during cooking as this is a potential fire
hazard.
WARNING!
Never clean the appliance with water jets or
steam cleaners. Always take care to ensure that the water or other
products use does not come into contact with electrical parts.
The use of toxic or harmful detergents is prohibited.
NOTE:
Do not clean the tempered glass in doors while it is still
hot.
NOTE:
In particular, the outer side of the baking chamber glass
has a heatproof layer; to avoid damaging this, do not clean it with
scouring pads, abrasive materials or powdered detergents. Wash only
with warm, soapy water.
Do not use solvents, detergents containing aggressive substances
(chlorides, acids, corrosives, abrasives, etc. ...) or equipment that
could damage surfaces. Before starting up the appliance again, make
sure that none of the cleaning equipment has been left inside.
5.3
REPLACING PARTS OF THE BAKING CHAMBER
5.3.1
CHANGING THE MOTOR
After carrying out the operations described in 5.1 above, to replace the
motor proceed as follows:(See plate A)

- Remove the rear panel by unfastening the fixing screws.
- Open the door and remove the tray rack on the right and left sides.
- Remove the rear rack
- Unscrew and take out the fan (item 13 plate. A
- Disconnect the motor fastons.
- Unscrew and remove the motor (item 16 plate A)
- Carry out the steps in reverse order to reassemble.
5.3.2
HEATING ELEMENT REPLACEMENT
After carrying out the operations described in 5.1 above, to replace the
heating elements proceed as follows: (See plate A)

- Remove the rear panel by unfastening the fixing screws.
- Disconnect the heating element faston connectors.
- Open the door and remove the tray rack on the right and left sides.
- Take out the rear rack
- Unscrew the plate screws
- Take out the heating element (item 17 plate A)

Carry out the steps in reverse order to reassemble.
5.3.3
CHANGING THE THERMOCOUPLE
After carrying out the operations described in 5.1 above, to replace the
thermocouple proceed as follows: (See plate A)
- Remove the rear panel by unfastening the fixing screws.
- Replace the thermocouple (item 12 plate A) by pulling it out of its
housing;
- Perform the above operations in reverse order to reassemble
5.3.4.
CHANGING THE SAFETY THERMOSTAT
WARNING!
Regularly check that the safety thermostat is
operating correctly.
After carrying out the operations described in 5.1 above, to replace the
safety thermostat proceed as follows: (See plate A)

- Unscrew the cap and fastening nut of the thermostat (item 3 plate A);
- Remove the rear panel by unfastening the fixing screws.
- Remove the thermostat sensor, located inside the insulating rock wool,
by unscrewing the casing and using a blade to remove the section of
rock wool involved;
- Slide out the thermostat and disconnect fastons;
- Replace the thermostat and the respective sensor, along with any
worn rock wool section, if necessary;

Carry out the steps in reverse order to reassemble.
5.3.5
REPLACING THE REMOTE CONTROL SWITCH
After carrying out the operations described in 5.1 above, to replace the
remote control switch proceed as follows:

- Remove the rear panel by unfastening the fixing screws.
- Disconnect the thermostat fastons (item 7 plate. A)
- Replace the remote control switch, disconnecting it from the omega
bar
- Perform the above operations in reverse order to reassemble.
5.3.6
REPLACING THE LOW-VOLTAGE TRANSFORMER
After carrying out the operations described in 5.1 above, to replace the
low voltage transformer proceed as follows:

- Remove the rear panel by unfastening the fixing screws
- Disconnect the transformer fastons (item 2 plate A)
- Unfasten the fixing screws
- Perform the above operations in reverse order to reassemble.
5.3.7
REPLACING THE 12V RELAY
After carrying out the operations described in 5.1 above, to replace the
relay proceed as follows:

- Remove the rear panel by unfastening the fixing screws
- Remove the relay (item 6 plate A) from the base
- Perform the above operations in reverse order to reassemble.
5.3.8
CHANGING THE PYROMETER (only F45E)
After carrying out the operations described in 5.1 above, to replace the
pyrometer proceed as follows:
- Remove the front control panel by unfastening the fixing screws;
- Remove the casing on the digital pyrometer and the corner fastenings;
