Southwestern Spiced Scotch Fillet Steaks
Ingredients
Ground cumin
Chili powder
Dried basil
Ground coriander
Dried oregano
Paprika
Salt
Black pepper
Scotch fillet steaks
Method
• Combine the herbs and spices and blend well. Rub the mixture on the steaks and
let stand for 15-20 minutes. (Alternatively, place the seasoned steaks in a shallow
bowl, cover and refrigerate for up to 12 hours.)
• Preheat the grill until the green 'Ready' light illuminates.
• When the grill plates are hot, arrange the steaks on the bottom plate, close the
top plate and grill for 4-9 minutes, depending on thickness and preference.
• Remove the steaks using nonmetallic tongs. Let the steaks rest, loosely covered,
for 5 minutes at room temperature before serving
