2.9.5 - Handle and hook
Proceed as follows:
1) Open the oven door
2) Unscrew the screws (A - fi g. 11).
3) Replace and reassemble everything in rever-
se order.
4) If necessary, turn the screw (B - fi g. 11) of
the hook clockwise or anticlockwise in order to
adjust the correct closing of the handle, paying
attention to the proper positioning of the tip of
the hook.

2.9.6 - Cooking chamber resistors
1) Operate from the right side of the oven in
order to disconnect the electrical connections
from the resistors.
2) Remove the grill racks and the fan blade to
have access to the resistors of the cabinet.
3) Unscrew the screws that fi x the resistors to
the cabinet.
4) Replace the resistors and reassemble
everything in reverse order, remember to resto-
re the silicone where it is present (use silicone
that resists to a temperature of 300 °C).
3.1 - General remarks
• The equipment is intended for professional use
and it must be used by trained personnel.
• The oven must be exclusively used to cook
food, any other use is considered improper.
It is strictly forbidden to wash the cooking
chamber or the door glasses with jets of cold
water when their temperature is still higher
than 70 °C.
The installation and all the extraordinary main-
tenance operations must be performed only by
authorized personnel possessing the necessary
professional qualifi cations. It is advisable to
have the oven checked on precise due dates.
For repairs only contact the authorized Service
Centers and ask for use of original spare parts. In
case of fault or malfunction, disconnect the ge-
neral power supply switch and close the water
supply faucets placed upstream the machine.
Contact the authorized Service Centers for re-
pair. The end user is bound to the sole ordinary
maintenance of the oven that is the control of
the general effi ciency of the oven and its daily
cleaning.
Failure to observe these obligations causes
disavowal of
all responsibilities of the producer.
• Read this guide carefully because it contains
important information and indications related
to the installation, use and maintenance safety.
Keep it in a safe place for any further reference.
• Before starting the oven you must thoroughly
clean the surfaces that may come into contact
with food.

TURNING ON AND OFF
When power is supplied, the card displays for
several seconds the software version.
Then the oven goes to the OFF status and on
the time display the LED is turned on and it
stays on hold.
By pressing ON/OFF:
you turn the card on;
you turn on all the displays waiting for the intro-
duction of the set point;
default temperature is 100 °C;
default timer is 000, default humidity is 0.
When the temperature is set by turning the re-
levant knob the display continues to fl ash for 15
seconds and then accepts the set value, unless
another knob is turned which causes immediate
acceptance of the value and makes the display
of the second knob fl ash while waiting for the
set point.
When the time is set by turning the relevant
knob, the display continues to fl ash for 15 se-
conds and then accepts the set value, unless
another knob is turned which causes immediate
acceptance of the value and automatically ma-
kes the humidity display fl ash.
When the humidity value is set by turning the
relevant knob the display continues to fl ash for
15 seconds and then accepts the set value; the
display continues to fl ash for 15 seconds and
then accepts the set value.
During the cooking cycle, at the stage of va-
riation of the set parameters, by turning the
relevant knob (temperature, time, humidity) it
is possible to change the parameters either by
waiting for 15 seconds or by turning a knob.

In case the oven is stopped and no operation is
performed for more than 15 minutes, the oven
turns off automatically as if the OFF key were
pressed.
The ON/OFF key is not active during the co-
oking cycle, to activate it you must fi rst press
the START/STOP key.
When you turn the oven off using the ON/OFF
key or at the end of the cooking cycle, the para-
meters last set are stored for 5 minutes.
5 minutes after it was turned off the card re-
turns, when restarted, to the initial stage of va-
lue setting.
START/STOP KEY
By pressing the START/STOP key:
The cooking cycle starts, the internal light is
activated.
The temperature display changes from visuali-
zation of the set point to set chamber tempera-
ture and the relevant LED turns on and stays on
until the set point value is reached;
the LED turns off above the set point value and
it turns on again below the set point value.
The timer display changes from time set point
to countdown time and the relevant LED fl a-
shes and becomes permanently lit when the
time is over.
The set value is permanently lit on the humidity
display and the relevant LED is turned on when
the humidifi cation is activated.
If it is not activated the core probe display re-
mains in a fi xed position. Pressing again the
STOP key during the cooking cycle. the cooking
cycle is suspended.
All the set parameters are maintained.
