Changing the sharpening stones

and angle adapters
The different sharpening stones fit in all the angle adapters. Use the adapter
suitable for the type of blade, depending on whether you are sharpening Eu-
ropean or Japanese blades. Choose the sharpening stone based on whether
the blades only require sharpening or if they are already quite blunt. The
blunter the knife is, the coarser the grain should be. Please note that ceramic is
fragile and requires careful handling.

Removing/changing the angle adapter:
Simply pull out from above (see Fig. 1.1).
Changing the sharpener/grain:
Open the cap, insert the desired grain, close the cap
(see Fig. 2.1 – 2.2).
Inserting the angle adapter: Push down along the guide
until you hear an audible click and the adapter
distinctly clicks into place (see Fig. 1.2).
Gentle pressure from your finger should now easily push the adapter
into place under the housing.
Storing: The unused angle adapter (A or B) can be stored in
the lower section of the V-Edge to save space (see Fig. 1.3).

Ceramic can break when it falls or is knocked.
Exchangeable angle adapters for European and Japanese blades
Exchangeable angle adapters for European and Japanese blades are
available.
The adapter not currently in use can be conveniently stored in the base of the
V-Edge to save space.
European knife blades
For example: ZWILLING paring knife, ZWILLING Compact,
ZWILLING carving knife, ZWILLING chef's knife.
Excluding serrated blades.

For example: ZWILLING Santoku, ZWILLING Nakiri, and all Miyabi knives.
