10 GENERAL FEATURES
These machines have been built in accordance with the CE directives regarding the
treatment and preservation of food.
The cabinet you have purchased manages to create the ideal conditions for the drying
process of sausages and other foods. It is equipped with a digital electronic controller,
which has several configurable programs to adapt it to the most optimal conditions of both
temperature and humidity for drying different types of food. It is available in cabinet
format and in various sizes. The cabinets work by controlling the temperature and at the
same time the relative humidity (high due to the humidity provided by the fresh products
when they are introduced into the machine), lowering it to the established limit. But it
should be noted that the machine cannot raise the humidity because it does not have a
humidifier.
The use of this machine is recommended to qualified personnel in the control of cured
meat drying and a detailed follow-up of the process is recommended on the first occasions
until an ideal adaptation is achieved between the way the machine works, the location of
the furniture, the gender introduced and the drying desired by each professional.
