NOTE:
If the mode setting is not displayed on the main
screen, it indicates that preheating is inactive i.e. set to 0.
You can tune the time of steam quantity between 1 and 10 sec by
default.
By pressing the "-" key consecutively, the "Steam"
parameter is deleted and the steam icon is shown on the
corresponding "+" button (Fig. 12a pos. V) indicating that if the
method of insufflation is used, the amount of steam provided by
default and set in the "Advanced" settings mode will be provided (see
point 3.3.7.1). Press this key (Fig. 12a pos. V) to select a quantity of
steam not provided by default if necessary.
The amount of steam can be expressed in other units according to
user preferences (see section 3.3.7.1).
NOTE:
If the information on the steam quantity is not
displayed on the main screen, it does NOT indicate that the
feature is disabled but that the default steam quantity to be
configured in the "Advanced" settings will be provided as
described in 3.3.7.1.
To turn the heating elements on and thus start heating up, simply
press the "Start/Stop" button as suggested in the status bar with the
words "PRESS START". When switched on, the baking chamber
lighting will also switch on automatically. "Lightning bolts" switch
on in real time to show that the heating elements are on (fig. 11 pos.
F) located to the right of the set temperature and the actual
temperature values. This graphic display also provides information
on the power level employed by the heating elements at any time,
shown by how much of the "bolt" itself is lit up. During the initial
stage following the heating element switch on, the status bar will
read "HEATING". Other parameters will be displayed such as the
estimated time required for the oven to reach the required
temperature ("READY IN xx min") and the icon status display (icon
"M" for example indicates manual mode is enabled) (fig. 11 pos. N).
NOTE:
The estimated time required for the oven to reach
the required temperature is indicative and will vary significantly
according to the parameters set during the switching on stage.
During this stage, the display will also alternate the real temperature
with the set one.
At this stage you can always edit the baking parameters set by
pressing the "+" and/or "-" button to increase and/or decrease the
parameters. To set the "Temperature" parameter, the display will also
alternate the real temperature with the set one; if you press "+" and/or
"-" , the current setting is shown in red ("Set Temperature") then the
subsequent pressures change the parameter.
If the temperature reached is higher than desired, reduce the
temperature set and the status bar will show the message
"PREPARING" instead of "HEATING"; open the door to allow the
oven to cool down if necessary.
NOTE:
Messages
"PREPARATION" mode do not restrict starting to bake which
is in any case always possible by pressing the "Start/Stop"
button, they just represent user utility functions.
To stop the heating/preparation stage, press the Start/Stop button for
at least 5 seconds to turn the heating elements off and STOP the
oven.
START IN PROGRAM MODE
Using the oven in Program mode enables the operator to work
"automatically", i.e. to save and/or call up from the memory (internal
or external) a series of baking programs with pre-set parameters.
possibility to activate the hood.
Select the required program with the "P" button to edit the list of
programs, then use the arrow keys to select the required program and
press "OK", the summary of the chosen program will be displayed.
Press "OK" to confirm the selection or "RETURN" to return to the
list of programs.
The main screen will change as in Fig. 11c and will display the name
of the program in the status bar alternately with the
START" message and the status icons. Furthermore if the program
displays an image by default, it will be shown below the baking time.
If there are further baking steps the baking time represents the total
time of the program. The total number of steps included in the
selected program represented by x/X is displayed to the left.

BAKING STAGE
When the oven reach the set-point temperature (unless a "delta T" is
set) and the pre-heating mode is adjusted, a buzzer will sound before
starting to bake. From now on until baking starts, the status bar will
display OVEN READY and the oven will retain the preheat
temperature set. The display will show the set point temperature and
turn white.
Open the door and load the oven. After loading the oven, once the
door is closed the baking timer will be enabled automatically.
During the baking process, the time display will countdown the
remaining time and a red line below gradually disappears while the
status icon in the status bar remains constant during the baking
process.
During the baking process, it is possible to edit the settings in real
time, by pressing the "+" and "-" buttons to adjust the temperature
and to increase/decrease the time. You can edit the amount of steam
during the baking process only in manual mode.
In any case the modified values during baking will only adjust the
current baking process while the information set when baking started
will not be adjusted. To edit follow the instructions of paragraph
3.2.1.
During baking time, any opening of the doors, signalled by a specific
icon, pause the baking timer and lock the rotation of the cart (see
paragraph 3.2.7) allowing the operator to act on the product being
baked in the oven without losing track of the baking time. Once the
door is closed, the timer resumes counting. If during the baking stage
the cart must be extracted, press the START/STOP button and wait
for the cart to set itself in position then open the door and act on the
product.
To reactivate the oven and continue baking, close the door and, if
necessary, press "OK" otherwise press "RETURN" to end the baking
in progress.
and the product can be removed from the oven. The display
intermittently shows the timer off icon (Fig. 12a).
WARNING!
continues to cook to finish baking if further baking is needed! If
more time is needed, press the "Timer" (Fig. 12a pos. U) to
extend the minutes.
When the door is opened automatically, power supplied to the
heating elements is disabled (see "AUOMATIC DOOR" function in
3.3.7.1). The STOP icon will be displayed (Fig. 12b). Remove the
product from the oven and close the door. After closing the door the
display shows a text message requesting if you want to continue or
stop baking. Press the "OK" button to continue with new bakings; the
display will show the last settings used in the last baking cycle; wait
until the oven reaches the set temperature and continue baking. At
this stage you can change the baking program, edit or proceed with
the manual mode of the baking parameters. If you want to stop
in
baking press "RETURN". The oven will stop and lighting will be
disabled automatically.
wait for the cart to set itself in position, and a text message displayed
will ask if the baking should be continued. Press "Return" to end the
baking session in progress.
MANUAL STEAMING
The "Steam" button manually activates the valve emitting steam
into the baking chamber. Each time the button is pressed steam will
be emitted for the set time in fig. 11a pos. E. If no value is displayed,
the duration is determined in the advanced settings (see "MANUAL
STEAM parameter n 3.3.7.1 ). The steam icon status (Fig. 11b pos.
O) lights up throughout the cycle.
It is possible to emit steam in manual mode as per the procedure
described above in the baking program, besides the default
insufflation program.
Vaporisation is enabled after exceeding a temperature of
120 degrees.
"ECO STAND-BY" FUNCTION
The "Eco Stand By" function is used to keep the oven warm while
reducing power consumption; this is the ideal solution during short
breaks in cooking operations.
Energy is saved by piloting the switching on of the heating elements
at factory-set levels which guarantee that the oven does not reach an
excessively low temperature.
To enable or disable the function, press the "STAND BY" key. Once
enabled, the screen will turn GREEN and a specific icon will appear
to the left of the parameters.
