Chicken Parmesan

Serves 2 to 4 (depending on just how hungry you are!)

boneless, skinless chicken breasts (6 oz. each), pounded
to make even, ½-inch thick cutlets

tablespoons buttermilk

cup whole-wheat panko breadcrumbs

cup grated Parmigiano-Reggiano cheese

teaspoon dried oregano

teaspoon garlic powder

Nonstick cooking spray
Olive oil for spraying

cup homemade or store-bought marinara sauce

ounces fresh mozzarella cheese, shredded
Fresh basil leaves, torn if large
1 . Place the AirFryer Basket onto the Baking Pan and coat with nonstick
cooking spray . Reserve .
2 . In a shallow bowl, beat the egg and buttermilk together . Mix together
the whole-wheat panko breadcrumbs, Parmigiano-Reggiano, dried
oregano, garlic powder, salt and pepper . Dip chicken cutlets in the
egg mixture, dripping any excess back into the bowl . Thoroughly
dredge each in the breadcrumb mixture .
3 . Place the breaded cutlets into the prepared AirFryer Basket . Lightly
spray each side with olive oil . Set the temperature to 400°F and

through cooking time, until internal tempertaure reaches 165°F .
4 . Spoon ¼ cup of marinara sauce onto the top of each cutlet and
sprinkle with the mozzarella cheese . Set the temperature to 450°F
and Broil for 1 to 2 minutes until brown and bubbly .
5 . Garnish with fresh basil leaves . Serve immediately .
