INSTALLATION
The machine comes palletised from the factory and in the working position. Maintain this
position, even during unpacking and installation (it tolerates momentary inclinations for
coupling to lifting devices).
The base pads of the machines should be positioned directly on the bed plate. A pallet lift
or forklift facilitates easy positioning. Pay special attention to the fact that the cutter does
not shift when it is lifted.
Subsequently adjust the base pads using the nut on the stud so that the machine is
seated correctly on its base (levelled lengthwise and crosswise).
Ensure that the voltage and frequency of the mains correspond to those indicated on the
machine's nameplate. Also ensure that the type of power supply of the mains and of the
machine (three phase, with or without neutral) is correct. It is mandatory that the machine
be connected to the mains through a differential protector with an adequate gauge for the
technical specifications indicated on the machine's nameplate.
With respect to the CM-41's, verify that it is no less than 300 mA.
The installer should adapt the male connection (plug) of the machine to the socket of the
mains so that they match perfectly.
Retighten the blades, keeping mind that they tighten to the left (left-hand threads). Push
with the left hand while pulling towards yourself with the right (as seen from a working
position facing the machine. See diagram 02). Also re-tighten the hex nut that fastens the

entire blade assembly (left-hand thread).
Connect the machine to the mains in order to verify that the rotation direction is correct. Press the emergency
stop button (P) and then activate the cleaning switch (B). The rotation direction of the bowl must be counter-
clockwise. If it rotates in the clockwise direction, stop the machine, and swap the phases on the plug. The cutter is
dangerous and must not be operated if the rotation direction is incorrect.
To unlock the emergency stop button (P), turn it slightly to the right.
As from this moment, the machine is considered installed and ready for use, subject to cleaning.
CONDITIONS FOR USE
The cutter is a machine designed mainly for processing boneless meats, although it does admit other products
such as vegetables and fish.
Its specific functions include mincing, mixing, combining and emulsifying.
In general, the raw material introduced into the machine should be cut into portions: the meat preferably having
gone through a grinder (3-hole plate), ice in flakes, sliced vegetables...
Before starting the machine, it is essential to have read all instructions first and to follow the installation and use
indications.
The machine may not be modified for any reason.
INSTRUCTIONS FOR USE
The working position is in front of the bowl, facing the control panel.
When starting the machine, the blades must always be started and rotating before the bowl is started.
The blades will only rotate if the first blade speed is activated first, as long as the bowl cover is not lifted.
By operating the buttons directly, you will be able to choose the various speeds separately for both the blades and
the bowl, so that they can be varied according to working needs.
To start the machine, the emergency stop button and the normal stop button must be released.
To stop the machine, press the black, inertia stop button (P).
The CM-41 machine has specific instructions listed below.
The process is the following:
- Check to see if the product to be prepared requires the same blades that are installed on the machine or if it
requires different ones, so that the blade arrangement can be changed if necessary.
- Start the machine in the first blade speed and the first bowl speed.
- Uniformly introduce the various raw materials required to make the product, and use the required speed ranges
(meat cut into pieces).
Special attention must be paid to gauging the blades, given that this will determine that the machine has a
balanced rotation and provides the optimum finish texture.
Therefore, once the blades and the appropriate spacers have been installed for the selected blade assembly,
install the blade fastening nut and tighten by hand.
