1 - GENERAL INDICATIONS
• The appliance must be installed by personnel professionally
qualified according to current standards and following the
manufacturer's instructions.
• Read all the information given in this manual
carefully as it gives important indications that
ensure safe installation, use and maintenance.
• Keep this manual for all future reference by all the operators.
• Once the packaging has been removed make sure the
appliance is in perfect condition. If you have any doubts do
not use the appliance and contact the authorised dealer.
• Before connecting the appliance make sure that the plate data
correspond to those of the electricity and water mains.
• All materials used for the packaging are compatible with the
environmental protection laws.
• They can be kept without danger or burnt in a specific waste
incinerator.
• All plastic components, to be disposed of for recycling, are
marked as follows:
PE
POLYETHYLENE: outer packaging film,
instruction bag, etc.
PP
POLYPROPYLENE: straps, etc.
• The appliance must only be used by people trained to do so.
• Before cleaning or servicing the appliance, disconnect it from
the water and electricity supply points.
• Disregard for the above can compromise the safety of the
appliance.
The manufacturer of the appliance is not liable
for damages caused by incorrect installation,
tampering with the appliance, improper use, bad
maintenance, disregard for the local laws or
unskilled use.
2 - COMPLIANCE WITH EEC DIRECTIVES
The appliances are made complying with the requirements of
the European Union Directive:

The plate with the appliance's specifications is affixed to the
front panel of the pan.
4 - TRANSPORTING AND STORING
4.1 - Transporting
The appliance is packed in a wooden crate that can be
handled using means suitable for transporting pallets.
Transport only one crate at a time.
INSTALLATION INSTRUCTIONS
4.2 - Storing
Store in a sheltered, aerated place where the temperature is
between -10°C and 50°C and where humidity is no more
than 95%.
Do not stack the crates on top of each other.
(maximum load distributed on the 4 uprights: 160 Kg).
5 - INSTALLATION
5.1 - Installation location
• Install the appliance only on sufficiently aerated premises.
• The connection, installation, ventilation and discharge of
vapours must be done following the manufacturer's
instructions, in compliance with the standards in force. For the
electrical part, conforming to the current C.E.I. standards in
force; the Fire Fighters regulations and the provisions laid down
by Law Decree 626/94 must also be complied with where
applicable.
5.2 - Placement
• Place the appliance under an extractor hood to ensure
extraction of the vapours produced during cooking.
• Level the appliance and adjust its height by turning the
levelling feet or in another way.
• Remove the protective film from the outside panels, pulling it
off slowly so that no glue is left on the appliance. Any traces
must be removed using an appropriate diluent.
5.3 - Connections
5.3.1 - Water
• Connect the water inlet pipes "1" and "2" to the distribution
network by means of cutoff cocks and suitable mechanical
filters.
• Before connecting the last part of the pipe to the boiler pan
it is advisable to let some water through to flush the pipes
clean of any ferrous deposits that could otherwise corrode
the stainless steel.
5.3.2 - Drains
• SInstall a pit under the pan's drainage tap, connected to a trap
that will allow the water to drain off.
• The drain pipes must be made in a heat resistant
material (minimum 100°C).
