Place a small stack of wood using small logs in
the middle of the oven, or slightly to the right. To

simplify lighting, you can use some 'firelighter'
cubes.
Light the fire. To facilitate lighting, you can use
2
an
electric or gas igniter.
After lighting the fire with a bright flame, close
the door. You can improve combustion by
adjusting the air flow by doing the following:

opening the ash pan, partially closing the door,
or adjusting the chimney butterfly valve. This will
help to keep the fire going and heat the oven
to the desired temperature more quickly.
You can add larger wooden logs for a livelier
fire. Do not put too much wood in at once and

place the door ajar as indicated in section 3 to
keep the fire burning inside the oven.

Once you have a hot bed of coals, move them
to the left-hand side of the oven.
The fire must be positioned on the opposite side

of the thermometer
so as to correctly detect the temperature of the
chamber.

Clean the refractory hob with the brush
Check that the temperature of the hob is as

Once the correct refractory hob temperature
has been reached, you can bake pizzas without

using the door. You can also place the oven
mouth ajar while leaving a few centimetres of
ventilation, or even open the ash pan.
