Drying Fruit and Vegetables
1. Please wash the fruit or vegetables thoroughly.
2. If necessary, remove any pips, stones and damaged parts.
3. Cut and grate the food which you would like to dry into
pieces of the required size (e.g. cut apricots in half).
4. If required, you can pre-blanch the vegetables and sprinkle
the fruit with a little lemon, sugar, cinnamon, honey or
grated coconut.
5. Fruit with a naturally waxy skin (e.g. grapes and figs) and
long cooking times should be blanched.
6. Place the fruits on the grid(s) in such a way that the fruits
do not touch one another. Each grid can hold approx. three
small sliced apples.
Drying Meat
1. Remove any fat and gristle from the meat. Then cut the
meat into narrow strips.
2. Marinate the meat for 6 to 8 hours.
3. Place the strips on the grid(s).
Drying Petals and Herbs
1. Cut the flowers/herbs in the late afternoon if possible and
not early in the morning as there is then too much moisture
(dew) on them.
2. Please select flowers or herbs which feel solid and have not
completely opened. Flowers which have opened completely
lose their petals during the drying process. In the case of
herbs you can use both complete stems and individual
leaves.
