• Hot smoking allows you to prepare foods for immediate consumption.
• Rest may be recommended for some meats. Once cool, keep at refrigerator
temperature.
• Although a hot-smoked food is usually consumed shortly after preparation,
products such as chicken, duck, or salmon may also be consumed in cold dishes.
• Serve smoked foods with products that complement the smoky flavor and aroma.
• Vacuum packing foods will extend their expiration date.
