RECIPES

Walnut-shaped cookies, also known as oreshki, are a Russian specialty. They can
be filled with a sweet or savoury filling. The oreshki are baked in the oreshki ma-
ker, then filled and two halves are joined together to make one oreshki. Naturally
there are no limits to your creativity in this regard, you will also find a few modi-
fications in recipe books and on the Internet.
Moreover you can also make the basic dough cited above suitable for savoury
oreshki by adding salt. In this case do not use any vanilla sugar. These oreshki
can be filled with a cheese cream, for example.
Basic recipe for the batter
400 g flour, 100 g sugar, 250 g mar-
garine, 2 eggs, ¼ tsp baking powder,
1 package vanilla sugar, 100 g corn
starch
For the filling:
1 can of sweetened condensed milk
Walnuts, whole
Separate egg yolks and egg whites.
Stir sugar and egg yolk until it is fo-
amy. Mix margarine and flour, add
this mixture to the sugar and stir it in
briefly. Beat egg whites until stiff. Ca-
refully fold the beaten egg white into
the batter. This should produce a re-
latively firm dough that you should be
able to easily shape into small balls. It
may take some practice to achieve the
right size. Do not give up – the finis-
hed oreshki are worth the effort!

The appliance can be set on its
edge for place-saving storage.
For the classic Oreshki you still need
walnuts and a can of sweetened con-
densed milk. Fill the oreshki hal-
ves with the condensed milk and, if
desired, insert a small piece of walnut.
Now bond the two oreshki halves to-
gether.
Would you prefer oreshki with a crea-
my filling? In this case we recommend
that you not add any solid ingredients
to the filling.
Tip: Instead of filling the oreshki with
condensed milk you can simply fill
them with fruit purée, whipped cream,
nut-nougat cream, pudding, etc. And
when you fill the oreshki halves, but
do not join them together, you have
visually appealing canapés, that are
well-suited as decorations for a buffet,
for example.
