3. INSTALLATION
UNPACKING
• Retain all shipping materials until you are certain that the sourdough fermenter has
not been damaged (either externally or internally) during shipment. It is solely custo-
mer's responsibility to report any shipping damage to the freight company.
• Check the area where the sourdough fermenter is to be installed for the following:
a) The flooring must be firm, level and slip-resistant.
b) The area must be drafty and relatively cool, make sure all the ventilation openings
on the sourdough fermenter are unobstructed.
c) It is necessary to prepare the room for all connections to the sourdough fermen-
ter: electricity and water shutoffs are required within a reasonable distance to the
sourdough fermenter.
• Loosen any fasteners used to secure the sourdough fermenter to the pallet. Then lift
the sourdough fermenter off the pallet by tank bottom flanges.
• Place the sourdough fermenter at its intended location, lock castors.
START-UP
• T o clean the sourdough fermenter, fill it up with water no hotter than 60°C and a
cleaning solution whose alkaline content does not exceed 2%. A mild dish detergent
works great in this application.
• Insert the plug into its intended socket. Use the ON/OFF Button to turn on the sour-
dough fermenter.
• P ress the Jog Button and check the mixing gear's direction of rotation. The direction
should be in a clockwise rotation, otherwise the dough mixing function may not work
properly.
• Use the hand valve to remove the water.
