Tips
Pre-fried foods require a higher cooking temperature than raw foods.
If you are cooking batters such as that used for doughnuts or tempura, allow the excess
batter to drain off and place directly into the oil with the basket already inserted.
When you are cooking different types of foods, always fry the food that requires the lowest
temperature setting first.
Cooking foods at 170°C or below helps to reduce the acrylamide content of the foods.
When cooking starchy foods, such as potatoes, partially cook them at a lower temperature
of 170°C to soften and cook through. Let the food drain while you heat up the fryer to
190°C. Then cook for the shortest possible time until the food is golden brown and crispy.
It is recommended that you filter the oil after each frying in order to completely remove
food residues, as these accelerate the breakdown of the oil.
Oil conservation
If you only use this appliance occasionally, empty the fryer of any oil and store it in an
airtight container in the refrigerator.
Store oil used for frying fish separately from oil used for frying other foods to prevent
other foods being tainted by the fish flavours in the oil.
Do not season foods before or during frying. The oil will no longer be usable in this way.
