What does frying actually mean?
The food swims in the hot oil as it cooks, which brown the surface of
the food. During the frying process, the oil/fat heats up to a temperature
between approx.150°C and 190°C.The temperature depends on the food
being cooked.
What kinds of food can you fry?
Most foods (vegetable, fish, meat, baked goods)can be cooked in a
fryer. However, it is important to prepare the food correctly:
Only fry in small quantities. Large quantities increase the frying
time and the food will absorb more oil.
If food items have been washed beforehand, they must be dried
well before you put them in the hot oil.
Vegetables ,meat and fish should be cut into small pieces before
frying. Small pieces reduce the frying time and the food will
therefore absorb less fat.
Some food items should be coated with breadcrumbs before they
are dipped into the hot oil.
Ensure that the breadcrumbs stick as well as possible to the food
--if they fall off during frying, this will contaminate the oil.
