Preparation: approx. 30 min. | Appetizer for 4 people

Red beets (approx. 6 oz each)

Pine nuts
3 oz
Walnuts or hazelnuts

Lemon, all the juice and zest
4 tbsp
Extra virgin olive oil
½ tsp
Salt
Pepper, to taste

Micro greens or sprouts
Red beet carpaccio
1. Peel the red beets and cut into sheets using
the Veggie Sheet Slicer. Arrange the red
beet sheets loosely on a plate.
2. Roast the nuts in a non-stick frying pan
without fat, remove them from the pan
and chop roughly.
3. Mix lemon juice and zest with oil, salt and
pepper. Drizzle it over the red beet carpaccio,
and sprinkle with the roasted nuts.
4. Sprinkle micro greens and nuts over the
carpaccio.
Alternatives:
• Celery root carpaccio:
Use peeled celery root instead of beets.
