PRE-USE PREPARATION AND DONUT MAKING
Now that you have cleaned and reassembled your DOUGH NU-MATIC Automated DONUT
MAKER™, making donuts is both easy and fun!
You will need
Clean cooking oil such as Canola, Peanut, Safflower (Regular) or Soybean Oil.
CAUTION: Never use butter, margarine or lard.
Paper towels and a brown paper bag for absorbing excess oil from hot donuts.
HOW YOUR DONUT MAKER WORKS
Your DOUGH NU-MATIC Automated DONUT MAKER™ will release a measured amount
of dough from the dough hopper into the hot oil. The donut will be held for seconds in a
frying area before advancing on to the flipping mechanism. The flipping mechanism flips
the donut over onto the spatula fingers. The spatula fingers slowly transport the donut
along to the end of the oil pan. The spatula fingers carefully rise up and out of the oil
pushing the doughnut over a drainage ramp, then allows the doughnut to slide onto the
donut slide, where it slides down into the collecting bin. The entire donut cooking cycle
takes less than one minute to complete. You will observe a fresh amount of dough is
dropped into the oil after the previous donut has been flipped and has begun the journey
towards the end of the oil pan. The donut making cycle is continuous.
MAKING DONUTS
IT IS IMPORTANT TO HAVE THE CORRECT RECIPE FOR DOUGHNUTS FOR THIS
UNIT TO WORK CORRECTLY! MAKE SURE YOU FOLLOW THE ATTACHED RECIPES
EXACTLY OR USE A MIX SPECIALLY PREPARED FOR AUTOMATIC DOUGHNUT
MACHINES
A.
Before filling the oil pan, make sure the oil drain is closed by putting switch (4) in
a horizontal position (Drain Closed). Also confirm the bin drainage pan is in
place before you turn on the DONUT MAKER.

You may want to place a cookie sheet under the donut maker and collecting bin,
to collect any oil that may drop while making donuts.
C.
Pour oil into the oil pan to the fill line indicated (DO NOT OVERFILL OR
UNDERFILL), plug unit into power source and turn the switch (3) on to HEAT.
The light positioned above the dials will power on to color red.
NOTE: The oil level is critical for proper frying, flipping, and maintaining the shape of the
donut. Open the safety window, to view the level periodically. (See Stopping the Dough
Maker on page 4 and 5)
D.
Open and pull down the donut slide. Position the collecting bin and drainage tray
directly underneath the slide.
E.
When the light turns from red to green, your oil has reached the correct
temperature and is ready to begin the donut making process.
F.
Fill the dough hopper with your favorite doughnut batter mix to within 1/2 inch
(1.27 cm) of the top. Choose one of the recipes included in this booklet
on page 6.
Wipe clean any overspill from the outside of the dough hopper.
Wipe clean any dough covering the dispensing trigger button of the
dough hopper. Push down on the dispensing (dough) trigger button and
then gently release, while observing the dough release (part) as it drops
down and then goes back up. (You are bringing dough down to the
bottom and checking the dough discharge with this step.) After the
release is closed, wipe clean any dough from this bottom area.
