The electronic thermoregulator is a controller for bain-marie trays. It controls the water level and tops it up
automatically when required. Powered at 230 V AC, it controls the heating elements, the lights and water
infeed. It has an NTC ambient temperature sensor input and a digital level sensor input for water infeed (filling
is timed). The control panel is connected to the DIN module via a telephone wire.

13 FILLING UP THE WATER TRAY

Characteristics
Bagno Maria is fitted with heating technology designed to operate when water is in the tray.
If the water level drops below the tray sensor, the heating system will cut out and the thermoregulator will
display an alarm.
The system will be started up again as soon as the tray is filled with water.
The machine is designed for the installation of a pressure switch (accessory) which enables the tray to be
filled with water automatically. The pressure switch is to be installed by a specialist technician.
Starting up Bagno Maria: filling the tray manually
Initially it must many times over ignite and extinguish the piece of furniture until that the level of the waterdoes
not exceed the sensor. As soon as the heating system cuts out due to lack of water, the tray is to be filled with
water. The water level is to be between a minimum of 30 mm and a maximum 50 mm. The water level is to
cover the tray sensor.

14.FOOD HYGIENE AND CLEANING

Before carrying out any cleaning operation, disconnect the electronic thermoregulator, turn the main
switch off and unplug the unit from the socket interlocked with switch.
Once a day
Clean all the machine parts using a cloath soaked in warm water and neutral detergent; never use abrasive
powder or detergents that could damage the system internally or externally, especially the glass or
polycarbonate parts.
Rins and dry with a soft cloth.
To ensure the equipment works properly and heat is trasmitted efficiently, the tray has to be kept clean.
Most importantly, any limescale has to be cleaned from the tray periodically if untreated water is used.
Use suitable, but NON-corrosive products to descale the tray.
To clean up the sensor with not corrosive antilimestone substances.
In the event of prolonged inactivity
Disconnect the electronic thermoregulator;
