STARTING UP THE EXTRACTION HOOD
The hood has a powerful motor to extract the steam from cooking.
Hood module settings are entered in the control panel on the baking
chamber module. Using the "CURSOR", scroll through the display
until the word "EXTRAMENU" is highlighted. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Hood". To confirm this choice, press
"OK".
In the "Hood" screen that appears, use the "+" and "-" buttons to select
the hood operating mode. Three different modes are foreseen:
•
"Off": power extraction is always off
•
"On": power extraction is always on
•
"Auto": power extraction only starts up when the door is opened
Select the chosen mode and press "OK" to confirm.
On the right-hand side of the hood module there is a wheel for manual
adjustment of the extraction motor speed. The speed of the extraction
motor can be modified at any time.
NOTE: The extraction hood can be set from the control unit of any
baking module.
NOTE: It is possible to increase the extraction power of the hood
further by removing the front guards as shown in fig 45.
WARNING! Before carrying out any operation, disconnect the
power supply by switching off the switches installed outside the
oven and wait for the equipment to cool to room temperature.
Always use suitable personal protective equipment (gloves,
glasses... ). All operations must by properly qualified technicians
and using suitable accident prevention equipment.

STARTING UP THE LEAVENING COMPARTMENT
In the same way as for the hood, the leavening compartment (if
present), can be set from the baking module control panel.
NOTE: The leavening compartment can be set from the control
unit of a single baking module (usually the bottom one).
Using the "CURSOR", scroll through the display until the word
"EXTRAMENU" is highlighted. Press "OK" to confirm.
In the screen that appears on the display, use the "+" and "-" buttons to
select this item in the menu: "Leavening Compartment". To confirm
this choice, press "OK".
In the "Leavening Compartment" screen that appears, use the "+" and
"-" buttons to select a series of leavening compartment operating
parameters, then press "OK" to confirm them. The parameters that can
be selected are the following:
•
"Enable": to decide whether or not to control the leavening
compartment
•
"Set temperature": sets the working temperature of the
compartment
•
"Enable zones": selects the heated areas in the compartment
(see 3.6.1)
•
"Daily Timer": used to program 2 daily start-up/shut-down
times
•
"Leavening timer": sets the leavening time. A buzzer and
specific message will inform that leavening has finished
After selecting the parameter to be set, use the "+" and "-" buttons to
set the required value. Press "OK" to confirm.
WARNING! Do not touch the heating elements; there is a risk of
burning or scalding.
3.6.1
COMPARTMENT WITH SEPARATE AREAS
The leavening compartment is fitted to allow independent control of 2
areas inside it.
The central upright inside the compartment is fitted with a movable
bulkhead which, in a simple manual operation, allows the passage of
air between the 2 areas created in this way to be blocked off.
The electronics enable these 2 areas to be managed separately: start-up
of the right hand side only (i.e. the left hand side remains inert), or
start-up of both areas.
3.6.2
COMPARTMENT WITH SLIDING DOORS
The leavening compartment can, according to model (M130E A-B-C),
be fitted with sliding and folding door that retracts completely inside
the compartment to reduce the size of the equipment at the front and
allow the operator maximum room to move.
WARNING! Slide the doors inside the compartments only after
opening the door fully (90°).
WARNING! The sliding doors reduce the overall dimensions at the
front of the equipment; however, they are more delicate compared
to traditional doors. Open and gently slide the door. Avoid all
prolonged periods (due to knocks) of keeping the doors open
without retracting them. Make sure that the doors have been fully
extracted before closing.
3.7
SHUT DOWN
To shut down the equipment, it is enough to switch off the main
switches on the chamber (fig.26).
When switched on again, the display will show the same status as it did
when the equipment was switched off.
Disconnect the power supply by switching off the main switches
outside the oven.
3.8 USE
After setting the required cooking parameters, prepare the product for
baking and use the shovel to place it on the cooking surface.
If you have no experience of the values to be set, we recommend that
you make some tests and then, based on the results of the first cooking
operation, change the settings until you find the best ones for your
needs. It takes approximately 40-45 minutes for the oven to come up to
temperature (350°C), only start cooking after the temperature has
stabilised.
NOTE: For the first cooking operations in particular or after a
long period in pause (stand-by) and if cooking directly on the
cooking surface rather than using pans, the first batches might
come out more cooked on the bottom; in this case, we recommend
using a lower floor temperature and then to increase it according
to the load.
WARNING! The insertion and removal operations for the product
need to be carried out using the relevant accident prevention
equipment (pizza shovels, etc.) and taking the utmost care.
The cooking phases can be observed through the porthole on the front
door. Should it be necessary to do anything to the product, for example
using an implement to pop the bubbles that may form in the pizza, the
door can be opened with great care using the front handle.
WARNING! Access to the inside of the baking chamber via the
door is only permitted using utensils and taking the utmost care.
Under no circumstances must any part of the body come into
contact with the baking chamber due to the risk of burns.
It is necessary to open the door slowly to avoid all danger of
scalding or burns from cooking steam.
The door handle has an innovative pull-out system to aid the operator
(fig.43). During opening and closure, a mobile mechanism allows the
handle to follow the natural arm movement of the operator so that
he/she does not rotate his/her wrist, thereby increasing safety.
When the door is fully open, the handle remains in an external position,
which forms a physical barrier, preventing the operator from coming
into accidental contact with the hot metal surfaces of the oven.
WARNING! The door with pull-out handle makes the appliance
more comfortable, ergonomic and safer to use; however, it is more
delicate that a traditional appliance door. Open and close the door
gently to avoid overloading the mobile mechanism inside it.
4
ORDINARY MAINTENANCE
4.1
PRELIMINARY SAFETY OPERATIONS
WARNING! Before carrying out any maintenance operation,
disconnect the power by switching off the switches outside the oven
and/or leavening chamber and wait for the equipment to cool down
to room temperature. Always use suitable protective equipment
(gloves, glasses... ). All maintenance operations must be carried out
by qualified technicians using suitable safety equipment.
All precautions are to keep the appliance in a proper state, and
failure to observe them might result in severe damage that will not
be covered by the warranty, and in unnecessary risks.
4.2
ROUTINE CLEANING
After carrying out the operations described in point 4.1 above, clean the
appliance as follows:
Every day at the end of operations, after leaving the appliance to cool
down, carefully remove from all parts of the oven any waste that may
have collected during cooking, using a damp sponge or cloth and a
little soapy water if necessary, then rinse and dry.
Carefully clean all accessible parts.
WARNING! Every day, carefully clean off any fat or grease that
may have dripped during cooking as this is a potential fire hazard.
WARNING! Never clean the oven with direct jets of water or with
jets of water under pressure. Always take care to ensure that the
water or other products used do not come into contact with
electrical parts.
The use of toxic or harmful detergents is strictly prohibited.
NOTE: Do not clean the glass on the doors when it is still hot. Do
not use solvents, detergents containing chlorides or abrasive
substances, or tools that might damage surfaces; before starting
the appliance again make sure that none of the cleaning equipment
has been left inside.
