5. MAINTENANCE
There is very little maintenance thanks to the correct way the
appliances have been made.
However, we do advise having the systems checked by qualified people
at least twice a year.
N.B.:
the manufacturer declines all responsibility for direct or
indirect damages caused by an incorrect installation, bad
maintenance, tampering, improper uses and by the failure to
comply with the accident prevention norms regarding the
prevention of fire and safety for gas systems.
5.1
CONVERTING FOR USE WITH A DIFFERENT TYPE OF
GAS – PASTA COOKER
The appliance is tested and set for working with natural gas according
to the characteristics table affixed in proximity of the appliance's gas
inlet.
If it has to work with a different type of gas, proceed as follows:
1.
It must be converted by qualified personnel
2.
The set of nozzles for changeover to another
different from the type for which the unit was set up, is normally
contained in a nylon bag with relative additional labels that show
all the types of gas.
If the set is not provided, it must be requested from the
dealer/importer, first ascertaining that the unit can in fact work
with other types of gas.
Once changeover and necessary adjustments are complete, the
label for the corresponding gas must be place in the appropriate
place on the characteristics tag, cutting out the correct one.
3.
Changing the burner nozzles: (fig.1)
to open the door, unscrew the nozzle (22) and change it. Now
put everything back in place.
4.
Changing the pilot nozzle (17):
to open the door, unscrew the small pilot connecting pipe (16),
change the nozzle, inserting it and the small pilot connecting
pipe in the nozzle holder together.
Check there are no gas leaks using a soapy water solution

Regulating the minimum flame:
remove the cock knobs (8), with a screwdriver turn the cock (6)
adjustment screw (7) until you get the minimum flame wanted.

and changed over to natural gas)
Remove the knob (8) from the cock and use a screwdriver on the
adjustment screw (7) to tighten it all the way down.
7.
Supply pressure:
it must be that specified on the appliance's data plate and in the
instruction handbook (see the Technical Data table). Check
supply pressure by inserting a rubber pipe, with a water gauge or
similar, in the pressure tap (10) welded on the gas shaft (9)
removing the screw (11). After it has been checked, tighten the
screw.
If supply pressure is different to that specified, find the cause and
correct it.
5.2
CHANGING SPARE PARTS
1.
Safety cock (6): remove the panel, unscrew the nut connecting
the cock to the supply shaft (9) and to the burner supply pipe,
unscrew the thermocouple (15) and the pilot pipe (16) from the
cock, change the cock.

Thermocouple

thermocouple (15) from the cock (6) and from the pilot support
(18) and then change it.
3.
Ignition plug (20): remove the panel, pull the plug connecting
cable out (21), remove the piezoelectric stop nut and change the
lighter.
4.
Piezoelectric lighter (19): to open the door, pull the plug
connecting cable out (21), remove the piezoelectric stop nut and
change the lighter.
5.
Pilot burner (18): to open the door, unscrew the pilot connecting
nut (13), the thermocouple (15), remove the ignition plug
connecting nut (17), remove the pilot securing screws and
change the pilot. Now put everything back in place.
6. INSTRUCTIONS FOR THE USER AND GETTING READY TO
WORK
1.
The pasta cookers are appliances for cooking food and must
only be used by professionally qualified personnel in the way
indicated in this instruction manual. Any other improper use can
be dangerous.
2.
Before putting the food in the cooker, it should be cleaned
thoroughly, washing the inside with hot water and detergent and
rinsing with plenty of water.
7. GETTING READY TO WORK

7.1

lighter knob and button and the pilot burner will light. Keep the knob
pressed for 10 to 15 seconds and then let it go. To open the door for to
control the lighting (13).
If it hasn't, repeat the operation.
7.2
TURNING THE PASTA COOKER BURNER ON AND OFF
From the pilot position

7.3

EMPTYING THE BOWLS
Connect the bowl drains to the floor channel. Turn the knob of the bowl
drain located inside the cabinet of the appliance counter clockwise as
shown on the plate.
Empty the bowl and close the cock, turning it clockwise.
8. MAINTENANCE, CLEANING AND CARE
Always disconnect the appliance from the gas supply before
embarking on any maintenance work.
Have a specialised technician check the condition of the appliance at
least twice a year, with particular emphasis on the effectiveness of the
control and safety devices. Clean daily all the steel parts with warm
soapy water and then rinse well with plenty of water and dry thoroughly.
If the appliance is not going to be used for a long time, rub all steel
parts briskly with a cloth soaked in Vaseline oil, leaving a protective
layer on. Also aerate the premises periodically.
Any contact with ferrous materials, both continuous and occasional,
must be avoided at all costs as such materials can corrode. This means
that ladles, slices, spoons, etc., must be in stainless steel. For the same
reason, avoid cleaning the stainless steel parts with steel wool, brushes
or scrapers made of ordinary steel.
Stainless steel wool can be used, rubbing it in the direction of the grain.
Never use large-grained kitchen salt that, depositing on the bottom of
the pasta cookers and being too heavy to be moved around, would not
be able to dissolve completely. This non dissolved salt, or that dissolves
after a long time, can give rise to corrosion phenomena in the points of
contact. For this reason we suggest using smaller sized salt (less than 3
mm) to add when boiling. If this is not possible and you are using large-
grain salt, dissolve it first in hot water in a separate receptacle
