General
Interceptors are designed to separate unwanted substances from wastewater
streams, prior to discharge into public sewer systems. Plumbing codes require
grease interceptors to be installed in commercial restaurants and facilities down-
stream of sinks and dishwashers. Grease interceptors function to remove fats, oils,
and grease (FOG) from the wastewater streams.
