6. CLEANING AND MAINTENANCE
Warning. Ensure the machine is isolated from the power supply before
commencing cleaning or maintenance.
Caution. This unit is not water proof. Do not use water jet or spray to
clean interior or exterior of this unit.
6.1 Daily cleaning
After daily work, clean the machine as per following steps.
To be done by a trained user:
6.2 Every three months
Check the hydraulic oil level at least every three months:
1. Lower the head to bottom position. Press the emergency stop button and unplug the
machine.
2. Open the side cover door.
3. Open the oil tank lid.
4. Make sure that the oil level is at the top of the gauge on the tank when the hydraulic
cylinder is lowered to the bottom position. This should only be checked when the
machine is cold.
If necessary add hydraulic oil to the appropriate level. Use only viscosity grade 32
hydraulic oil.

1. Press the switch button 2 & 4 to lift the blades.
Remove the dough remains with a plastic scraper.
Wipe the blades with a damp cloth.
2. Press the switch button 2 to lift the pushers.
Wipe the pushers with a damp cloth.
3. Open the side door, and clean all the dough drops on the
plate.
