9. ORDINARY MAINTENANCE

IMPORTANT: when servicing the equipment, be sure that the light in the working area is sufficient. If necessary, use an
additional source of light. Exercise caution also when approaching the hot and moving parts marked with the relevant
symbol. The use of heavy-duty gloves is recommended.
CAUTION: The refrigeration system does not alter the chemical nature of the defrost water produced by the cabinet in
any way, which is only produced by the air moisture contained. Defrost and wash water may nonetheless mix with pol-
lutants due to the products stored in the equipment, to preservation methods and food remains, to the accidental crush
of recipients containing liquids or to the use of improper detergent (see section 10 point 1). THE WATER PRODUCED BY
THE REFRIGERATION SYSTEM MUST THEREFORE BE DISPOSED OF THROUGH THE SEWER OR PURIFICATION SYSTEM
IN COMPLIANCE WITH THE APPLICABLE REGULATIONS.
CAUTION: BEFORE ANY JOBS ON THE CABINET, DISCONNECT THIS FROM THE POWER SUPPLY BY UNPLUGGING
IT (fig.17).
DOOR ANTIFOG LINER FILM
Cabinet doors are provided with an antifog liner film that prevents mist from building up in any temperature and humi-
dity condition, even after long immersion in water or frequent cleaning. Being extremely hydrophilic, this lining causes
water droplets to spread out without turning into mist. However water absorbing, the antifog film does not dissolve in
water and consequently does not get stained when soaking wet. The antifog film is not damaged by commercial glass
cleaners, stain removers, ammonia, alcohol or benzine and does not discolour when exposed to the sunlight or heat.
Surfaces so treated may be cleaned using common glass cleaner and a sponge, a rag or a paper towel. Do not use
detergent containing abrasive, strongly acidic or caustic substances. Unless removed, greasy residue from cigarettes or
airborne oil may diminish the film's antifog properties. Greasy residue must be removed using oil stain remover.

CLEANING THE CABINET

1) Clean all outer parts of the cabinet on a weekly basis using only a soft dry cloth. Never clean it using flammable or
abrasive cleaning agents, alcohol, acetone or solvents.
NEVER CLEAN THE CABINET BY THE USE OF WATER JETS. Clean glass surfaces using glass-cleaning products only. The
use of water on glass is not recommended, as it may cause limescale to build up.
2) Keep internal surfaces perfectly clean. As part of internal cleaning, defrost the cabinet whenever frost thickness on the
walls exceeds 5 mm, which could impair cabinet performance. However, the cabinet can be defrosted sooner if food
display purposes recommend it. Proceed as follows:
a) Empty the cabinet, store its contents in coldrooms or freezers suitable for the required preservation temperature.
b) Unplug the cabinet from the power outlet.
c) Wait until the cabinet reaches ambient temperature and no trace of ice remains on the walls. Do not try to speed up
the process by using metal or sharp tools that may damage the walls.
d) Carefully clean the inside of the cabinet with lukewarm water and mild soap, then wipe thoroughly with a soft cloth.
e) When the inside surfaces are perfectly dry (check and if not, let them dry on), close the doors and start the cabinet
again.
f) After approximately three hours, load the products back into the cabinet.
3) Clean the condenser at least every 30 days with a hard non-metal brush, removing dust and dirt from between the
